Teriyaki Salmon & Broccoli

Ingredients:
3 cups broccoli florets
¼ tsp salt
¼ tsp pepper
12 ounces raw skinless salmon (should yield 10 oz cooked)
3 tablespoons teriyaki sauce

Directions:
1. Preheat oven to 350°F/180°C.
2. Fold the parchment paper in half, then open.
3. On one half, lay down the broccoli. Spray Pam on the broccoli and sprinkle on salt & pepper.
4. Lay the salmon on the broccoli, and pour on teriyaki sauce.
5. Fold the parchment paper over the salmon, and cinch the paper together by folding it over itself along the edges.
6. Bake for 20 minutes or until internal temperature of salmon reaches 145˚F/63˚C.

Serves 2. Per serving: 3 condiments, 3 green, and 1 lean

Balsamic Chicken & Peppers
Makes 4 servings
Per serving:
1 Lean
1 Green
3 Condiments
1 Healthy fat

Ingredients:
36 oz Chicken breast
2 cup Chopped Bell Peppers
4 tsp Oil, olive
2 Tbsp Chopped Scallions
1 tsp Garlic
1/2 tsp Rosemary
1 Tbsp Worcestershire
1 tsp Basil
1/2 tsp Thyme
3 tsp Balsamic Vinegar
1/4 cup Chicken Broth

Directions:
Preheat oven to 375.
In a bowl add green peppers and onions.
In measuring cup stir balsamic vinegar, Worcestershire, olive oil, broth, minced garlic, and herbs.
Pour sauce over peppers and onions. Toss until well coated.
Place chicken breasts in baking pan and pour pepper mixture over.
Cover pan loosely w/foil bake 45-60 minutes. Check chicken at 40 minutes. Spoon sauce from bottom of pan over top of peppers and chicken. Continue to bake until chicken has reached an internal temperature of 165

Green Shakshuka

serves 3: 1 lean, 3 greens, 3 condiments per serving

Ingredients:
6 cups raw or 4 cups frozen spinach
1/2 cup almond milk or 1/4 cup fat free half and half
1 bunch fresh basil
2 frozen parsley cubes or 1 bunch fresh parsley
8 eggs and 3 egg whites
2 tbsp low fat cream cheese
1 tbsp low fat mozzarella
1 tbsp crumbled feta
1/4 tsp salt
1/4 tsp pepper

Directions:
1. Preheat oven to 350 degrees
2. Sautee the herbs and the spinach until wilted (or defrosted)
3. Add milk and cheeses and spices
4. Make wells for the eggs and crack one egg in each
5. Place the whole pan in the oven for about 10 mins
6. Remove when egg whites are solid, 10-15 minutes.

Mock Coconut Pie
Yield: 2 servings
Per serving:
1/6 Lean
1 Green
2 Condiments
1/2 Healthy Fat

Ingredients:
3 packets Splenda
1 egg
1 tbsp light butter, melted
1 tsp lemon juice
1/4 tsp vanilla extract
1 cup cooked, shredded spaghetti squash
1/4 tsp coconut extract - I didn't have any but I plan to add this next time and leave off the cinnamon
Dust of cinnamon

Directions:
Preheat oven to 350. Beat the Splenda and egg together until light and frothy. Beat in lemon juice, vanilla and butter until well blended. Stir in spaghetti squash. Pour the mixture into a ramekin. Dust the top with cinnamon, if desired. Bake in a preheated oven, until a knife inserted in center, comes out clean 40 to 45 min. Cool on a rack before serving.

Salt & Pepper Spaghetti Squash Kugel

Makes 2 servings:
3 green
½ lean
3 condiments
1 healthy fats

3 cups spaghetti squash
3 eggs
1 teaspoon salt
1 teaspoon pepper
2 teaspoons canola oil

Directions
Preheat oven to 350 degrees.
Mix all ingredients except for the oil.
Pour oil into a pan and place in preheated oven for 5 minutes.
Pour squash mixture into hot oil and bake for 45 minutes.
Remove kugel from oven and pour off excess oil.
If the kugel is still too watery, bake out some of the moisture before serving

Rueben Wraps with Thousand Island Dip

Cook Corned Beef in a Crock-Pot or oven. Measure out 10 ounces cooked meat (5oz per serving)
Blanch 4 large Cabbage leaves, set aside.
2tbsp Walden Farms Thousand Island Dressing

For Sauerkraut:
1/4 cup cider vinegar (1 Condiment)
1/2 cup water
1/4 teaspoon caraway seed (1/2 Condiment)
1/2 teaspoon mustard seed (1/2 Condiment)
1/4 teaspoon allspice (1/2 Condiment)
1/4 teaspoon coriander seed (1/4 Condiment)
1/8 teaspoon fresh grated ginger (1/8 Condiment)
1/4 teaspoon bay leaves, crushed (1/8 Condiment)
1/2 teaspoon dill w**d (1/2 Condiment)
1/4 teaspoon cinnamon (1/2 Condiment)

Directions:
In a large saucepan combine ingredients plus ½ cup water from Crock-Pot corned beef. Bring to a boil. Reduce heat and add 2 cups thinly shredded cabbage (4 Green) into the saucepan, cooking until tender.

Strain shredded cabbage of extra water.

To assemble Wraps:
Place 4 blanched Cabbage leaves on 2 separate plates. Add 2.5 oz. beef to each leaf.

Next, add ½ cup "kraut" and dill pickle slices (snack).

Serve with Walden Farms Russian Dip or spread inside wrap

Roll or Wrap and enjoy!

2 Servings: 1 Lean, 2 Green, 2 Condiments, optional snack if you use dill pickles
