Ever had black lentils? 👀 This recipe will blow your mind!
Easy Black Lentil Curry Recipe ⬇️
Ingredients: 1 cup dried black lentils (pre-cooked), 1/4 cup black beans, 1 onion (diced), 4 roma tomatoes (diced), 3-4 cloves garlic (minced), 2 inch piece of ginger (grated), 2 tsp ground coriander, 2 tsp cumin, 2 tsp curry powder, 1 tsp turmeric powder, 1/2 tsp chili powder, pink Himalayan salt (to taste), coconut milk (15 oz can)
Pre-cook black lentils and set to the side.
In a skillet, add avocado oil, onion, ginger, and garlic, then simmer for 5-6 minutes. Next add in the coriander and cumin and cook for an additional minute before adding in the tomatoes.
Allow this to cook for 5 minutes, then add 1 cup of water/vegetable broth, curry powder, turmeric, chili powder, pink Himalayan salt, black lentils and black beans. Bring to a boil, then allow to simmer for 20 minutes, uncovered and stirring occasionally.
Add the coconut milk, heat for a few more minutes, then serve immediately.
