For I learned time and time again that human beings cannot be saved, or fixed, or grown by others — they can only be loved. So I will love you, and I will love you well.

it’s hard being away from the one you love for weeks or months at a time. whether you’re the one who happens to be doing the traveling, or you’re the one staying at home, it’s tough either way.
war travels a lot playing bass in an amazing band and I miss him more than anything while he’s gone. I’m a natural born caretaker (hello cancer sun sign) and so when he’s home, I truly enjoy showing love to him by supporting his music and being together, spending quality time. I really have learned to value the time we spend together even more now while he’s home.

when he’s away traveling, it really has allowed me time to remember to reset and to refocus my energy back on myself, getting into a healthy routine and finding time to do what I love. I’ve come to realize I need to remember to always take a little bit of time daily to do something I love to do, whether he is away traveling or he’s home with me. it’s hard when you’re always focusing on doing something for the other person, you can easily forget about yourself. but it’s just as equally important I focus on me.

one of my favorite ways to show love, is by making food and setting the ambiance ✨ War came home yesterday from being gone and I prepared this spinach and chicken enchilada dish and had it ready in the fridge to bake when he got home. i figures the best thing to come home to, is a clean house, a home cooked meal and your girlfriend 😉 this dish was comforting, but a little healthier than a regular enchilada recipe. using less cheese, grain free tortillas and they are definitely homemade with love. recipe is in my highlights 💗 @ Costa Mesa, California

Missed posting this photo on national margarita day, so here is a photo of a healthy grapefruit margarita we made! The lady at BevMo suggested I slice the grapefruit in half & roast them underneath the broiler, adding a layer of sugar to the flesh part; charring it until the edges give it a creme brûlée look. so we gave it a go. still working on perfecting the best healthy margarita, but not a bad thing to have to work on perfecting! 🍊now taking suggestions ~

Food is my love language. I truly love nothing more than sitting down to enjoy a meal with someone I love. The quality of ingredients chosen to use is of big importance to me, as health is very important. What I really enjoy about cooking with someone else is, the conversation, quality time and the creativity that we have together. I am not the best cook by any means, I do have a handful of recipes in my pocket I am good at, but that’s the amazing thing about cooking with others, is getting the opportunity to learn. To me, sharing a bottle of wine, lighting candles, turning on music and creating the ambiance in the home is the basis of a great meal. I love to try to make food healthier too, but I also love to indulge from time to time as life is too short to not give in sometimes. My hope is to bring back the art of a creating and sharing a meal with someone you love.

This year, my plan is to start cooking more with my friends and family, creating and sharing those memories through food. I will start sharing this idea more as it comes to fruition. In the mean time, I wanted to share an idea for a super simple goat cheese and prosciutto wrapped chicken thigh recipe. I found all ingredients from and ended up serving it with a side of their cauliflower gnocchi that I mixed with peas, zucchini and fresh herbs. All ingredients for the goat cheese and prosciutto wrapped chicken are in the next photo. You’ll need to lightly oil the sheet pan before placing chicken. It’s very simple. I placed the thighs on the sheet pan, added a few sliced shallots to each piece and a scoop goat cheese and wrapped each chicken with 1 piece of prosciutto. I then topped it with the bruschetta mix and baked at 400 degrees for 30 mins or until the thigh had an internal temperature of 165 degrees. I’ve been off this account for a while, but I always find my way back to it because I just can’t seem to let this go!! I’ve been trying to create super simple meals at home, so I can balance my time better. Here’s a soy chorizo vegetarian chili I made with a side of nacho chips. Used a jar of homemade vegetarian chili & added the cooked soy chorizo. Topped with goat cheese, squeeze of lime & avocado. Definitely a keeper, plant based & filling!
