Whoever came up with zucchini air fryer bites … you’re a legend!! These are crispy on the outside, soft inside, and give total fry vibes without the carbs. Didn’t think I’d love them this much but here we are.
I just tossed zucchini chunks with a tiny bit of olive oil, parmesan, garlic powder, and Italian seasoning. Air fried them at 400°F for 10 minutes, shook the basket halfway through.

Why does my butter go moldy so quickly 😢 The last time this happened, I cut off the mold and ate the rest, but this time it looked much more disgusting, so maybe not. I used to keep this Kerrygold in the fridge for months, but with a new house and a new fridge, it barely lasted 2-3 weeks.

Ok y’all I never liked cottage cheese until now… I’ve been testing out recipes and this one is a keeper!!!
Chicken Parm Cottage Cheese Bowl
Ingredients
4oz of cooked chicken
1/2 cup of cottage cheese
1/4 cup of mozzarella cheese
2 tablespoons of Raos sauce
Italian seasoning
Garlic
parmesan cheese
Microwave for 1 minute and serve.
Variations & Tips
1. use chopped rotisserie chicken or your favorite nuggets. I prefer this brand pictured or bare brand and air fry them while prepping the ingredients.
2. I prefer Raos or homemade sauce for flavor and less sugar but you can use your favorite
3. Switch out toppings and make it a low carb pizza bowl with pepperoni and Italian sausage
4. Easy meal prep option that freezes well

Garlic Herb Egg & Cheese Bake Cups

These are perfect for meal prep and reheat beautifully.

HOW TO MAKE:

Whisk together 2 eggs, 2 tablespoons cottage cheese, 1 tablespoon shredded mozzarella, and a pinch of garlic powder, Italian seasoning, salt, and pepper. Pour the mixture into lightly greased silicone or mini muffin cups and bake at 375°F for 12–15 minutes, until just set. They come out soft, savory, and packed with protein — great for quick breakfasts or snacks.

simple, filling, and perfect for a quick breakfast or snack that actually keeps you full.
ingredients:
• ¾ cup Two Good or Oikos Triple Zero Greek yogurt
• 1 tbsp almond butter
• ½ cup berries
• cinnamon or stevia (optional)
how to make:
layer yogurt, almond butter, and berries in a bowl or jar. sprinkle with cinnamon or stevia if desired and enjoy.
nutrition (approx):
300 calories | 18g carbs | 10g fat | 30g protein
