I see a lot of posts about being tired/bored with salads so thought I’d share this roasted corn salad with apricots. I was late to the “fruit in salad” game but fear not, I’m a convert.

I “roasted” the corn in a skillet and you can get just as much char on the kernels as you would on a grill. (Reminder that smoke detectors are NOT timers. 😂 😂 😂)

Side note:

I added chicken to hit my protein macros. And I took one bite and thought the sweet of the corn and the apricot needed a little heat — so I added a drizzle of Siracha. 💃

Man it pays to live across the street from the Butterfly Guy!

I left to run some errands and came home to all of these lovelies— including this fun starfish cactus that should bloom any day.

I started this bed late this spring and only had the energy to tear out the grass and amend the soil for about 1/4 of it. So while I wait on the cardboard and mulch to do its thing — its a full-sun container garden.

The 🌽 corn, watermelon 🍉 and sunflowers 🌻 are my handiwork!

The more you know!

What the what⁉️ Same hens, same land, same routine. So what's the difference? DROUGHT. 🔥 Pasture raised, "free range hens (like ours) that have access to green, grassy pastures tend to lay eggs with darker yolks than their caged counterparts. This is primarily due to the carotenoids (yellow, orange, and red plant pigments) found in the clovers, grasses, and other greens that hens consume outdoors." But when there's a lengthy drought, nothing is green or colorful. Everything turns brown. 🥀 The yolk on the right is from an egg laid approx. three weeks ago, months into our severe drought. The yolk on the left was laid a few days after our first random rain storm when the grass immediately turned greener and insects emerged! 🦗 Now you know! 🧠 P.S. Commercial operations will add coloring to their chicken feed to mimic that more natural, healthier looking yolk. 🤯

While I love my small house, it is not great when it comes to storage. Plus, despite being i am usually not overly organized, however decided to lean into my tendencies and reorganize my pantry. Sadly this is only half. I need some more work on the “non-bulk” items (cans, bottles, etc). . Tag me in your pantry storage ideas.

Huge congrats to our LVBA friends. Lots of little piglets to welcome to the world!

She did it!! 🎉 Congrats, Mulan! She started stage 2 labor around 10 pm and the last one popped out around 12:15 am. She is such a great mama and made sure they were safe and out of the way for each push. 🥰 We are so grateful she knew what to do with us newbies. Welcome to the farm, piggies! 👏🏼
