No-Cook High-Protein Homemade Date Jam Snack on Matza ✨
This recipe is so special because it came from one of my patients, and it’s been a game changer for her. It helps kill those sweet cravings, and thanks to the Greek yogurt and whipped cottage cheese, it’s high in protein while still having that perfect sweet and salty combo… pure magic 😍
Ingredients:
1 box (12 oz) organic pitted Medjool dates (I used Trader Joe’s)
3/4 to 1 cup hot water (enough to soften the dates)
1 tsp vanilla extract
1 tsp ground cinnamon
1/4 cup strawberries
1/2 matza bread
1 tbsp low-fat Greek yogurt
1 tbsp low-fat whipped cottage cheese
fresh mint and crushed nuts (optional)
This amount of dates makes about 1 mason jar of date jam
Directions:
1. Place the dates in a bowl with hot water and let them soak for about 10 to 15 minutes, until soft
2. Transfer the dates to a food processor along with a bit of the soaking water, vanilla and cinnamon. Blend until you get a jam-like consistency. It’s okay if it has a few small chunks. Transfer the jam to a mason jar
3. Cut the matza bread in half and spread the whipped cottage cheese and Greek yogurt on top
4. Add 1 tbsp of the date jam over the top, then layer with strawberries
5. Finish and serve. Top with crushed nuts and fresh mint if using. Serve and enjoy 🥰
