A New Orleans–style muffaletta is my all-time favorite sandwich, and this slider version is hands-down the best way to feed a crowd. Layers of meats, provolone, and that briny olive salad all tucked into a buttery, sesame-topped bun.

This is our current hyperfixation meal when we want a steak night in! It’s stupid simple but it’s got that major WOW factor. 🌶️
Next time you’re grilling steaks, make these Basque-style roasted piquillo peppers alongside… SO. GOOD.

Piquillos might look like regular roasted red peppers in the jar, but they’re totally different: smaller, more intensely flavored, and perfectly balanced with sweetness + subtle smokiness. Trust me… don’t sub. Find the piquillos. It’s worth it. 🙌

SAVE THIS ONE for an easy, quick, clean-out-the-fridge / no-brainer dinner 🥬✨

These Thai-Inspired Turkey Lettuce “Wraps” are light, lean, saucy, and protein-packed! And if your lettuce leaves are tiny like mine… just turn it into a SALAD. 😅👌

THAI-INSPIRED TURKEY LETTUCE “WRAPS” (or salad 🫶)

For the Sauce:
• 2 tablespoons creamy almond butter
• 1 tablespoon red curry paste
• ¼ cup coconut aminos
• 1 teaspoon fish sauce
• 2 tablespoons freshly squeezed lime juice
• ½ cup chicken broth
• 2 garlic cloves, minced
• 2 teaspoons tapioca flour

For the Turkey:
• 2 tablespoons avocado oil
• 2 pounds ground turkey
• ½ cup matchstick carrots
• 1 small red bell pepper, finely diced
• 4 green onions, thinly sliced on the diagonal
• ¼ cup finely chopped fresh cilantro, plus more for serving
• Butter lettuce leaves, for serving
• ¼ cup roughly chopped cashews, for serving

How to Make It:

For the sauce: Whisk together almond butter, red curry paste, coconut aminos, fish sauce, lime juice, chicken broth, garlic, and tapioca flour until smooth. Set aside.

For the turkey: Heat avocado oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up, until mostly browned. Stir in the carrots and red bell pepper and cook until just tender, about 2–3 minutes.

Pour in the sauce, stir, and let it bubble until thickened and glossy. Serve in butter lettuce cups (or over chopped lettuce as a salad!) and top with green onions, cilantro, and cashews.

Cozy, savory, and done in 20 minutes.

These seared chicken thighs are served in a garlic-ginger bone broth that’s silky, comforting, and so flavorful. Perfect over rice or noodles when you want something nourishing but easy. 🍜✨

Seared Chicken Thighs in Garlic Ginger Bone Broth
Serves: 2
Cook Time: 20 minutes

Ingredients
• 2 tbsp avocado oil
• 4 boneless, skinless chicken thighs (trimmed)
• Salt & pepper
• 1-inch k**b ginger, peeled & cut into matchsticks
• 3 garlic cloves, minced
• 2 tsp toasted sesame oil
• 4 cups chicken bone broth (I use Fond, shiitake flavor)
• ¼ cup coconut aminos
• 1 tbsp rice vinegar
• 1 tbsp tapioca flour
• 1 head baby bok choy, end removed & leaves separated
For Serving
• Cooked rice, rice noodles, or miracle noodles
• Thinly sliced scallions
• Chili crisp

Instructions
1. Heat avocado oil in a medium pot over medium-high heat. Season chicken generously with salt and pepper.
2. Sear chicken 3–4 minutes per side until golden and cooked through. Remove and set aside.
3. Lower heat to medium-low. Add sesame oil, garlic, and ginger; cook 1–2 minutes until fragrant (don’t burn).
4. Pour in bone broth, scraping up any browned bits. Bring to a rapid simmer, then reduce to low, cover, and simmer 5–10 minutes.
5. In a small bowl, whisk coconut aminos, rice vinegar, and tapioca flour. Slowly stir into broth and simmer until slightly silky.
6. Add bok choy and simmer just until wilted, about 3 minutes.
7. Serve over rice or noodles, top with sliced chicken, ladle broth and bok choy over top, and finish with scallions and chili crisp.

One of my favorite kinds of dinners: fast, flavorful, and born from leftover cabbage in the fridge. ✨

This spiced lamb (or beef!) and cabbage stir fry comes together in 20 minutes and somehow tastes like you planned it. Savory, a little smoky, and finished with lemon + dill for brightness. Saving this one for repeat nights.

Spiced Lamb & Cabbage Stir Fry
Serves 4 | Total time: 20 minutes

Ingredients
• 1 tbsp extra-virgin olive oil
• 1 lb ground lamb or beef
• ¼ cup minced yellow onion
• 3 garlic cloves, minced
• 1 tsp kosher salt
• ½ tsp black pepper
• ½ tsp crushed red pepper flakes
• 1 tsp ground cumin
• 1 tsp smoked paprika
• 1 tsp paprika
• 1 tsp dried oregano
• 1 tbsp tomato paste
• ½ cup beef bone broth
• 4 cups shredded green cabbage (½ medium head)
• 1 tbsp fresh lemon juice (½ lemon)
• Fresh dill, for serving

Method
Heat oil in a large skillet over medium-high heat. Add meat and cook, breaking it up, until browned (about 7 minutes). Drain excess fat if needed, leaving a little behind.
Add onion and garlic; cook 2–3 minutes until soft.
Stir in salt, pepper, red pepper flakes, cumin, smoked paprika, paprika, and oregano; toast 1 minute.
Add tomato paste and broth; stir to combine. Add cabbage and cook 3–4 minutes until just wilted.
Reduce heat to low, stir in lemon juice, finish with fresh dill, and serve.

Quick, cozy, and the best way to use up that cabbage sitting in your crisper. 🥬✨
