A Southern favorite with rich, smoky flavor, without the meat.
Ingredients:
- 1 bunch collard greens, chopped
- 1 tbsp olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 3 cups vegetable broth
- 1 tsp smoked paprika
- ½ tsp red pepper flakes (optional)
- Salt + pepper
Instructions:
- Sauté onion in olive oil until soft.
- Add garlic + smoked paprika.
- Add collards to large pot and sauté for 30 minutes.
- Pour in broth.
- Add red pepper flakes, salt, and pepper.
- Cover and simmer on low for 1 to 2 hours, until soft.
