Mary Kathryn Bass and Leslie Needleman founded the GEM in 2012 as the first free-standing organic juice bar in Dallas. Leslie discovered firsthand the power of organic juice, clean food, a
nd a plant-based, anti-inflammatory diet during a battle with cancer. They found, incredibly, they could use food as medicine not only as a way to heal but also to stay healthy for a lifetime. The GEM juices are non-HPP (high-pressure processing) — a technique other juice joints may use to extend the life of their products. But it kills healthy enzymes healthy bodies need! It may seem be less efficient (and more expensive) to have juice last days not weeks, but it’s what’s best for our bodies. Our products are also non-GMO, refined sugar-free, gluten-free, dairy-free, and artificial ingredient-free (coloring, flavors, ingredients, sweeteners). All of our soups, h**p milk, cashew milk, almond butter, juices and smoothies are made from scratch — you won’t find any preprocessed kale here!
