We're sharing a few favorite holiday recipes that our Wee Care providers enjoy making with their kids. The first is from Emily Bankhead, who says, "These pumpkin orange cookies are always a fall/winter tradition in our home. Every year, my family gathers to bake them together, filling the house with the scents of warm spices, pumpkin, and citrus. These soft, cake-like cookies never last more than a few days and are the perfect treat for fall get-togethers, Thanksgiving, or a special treat. From my house to yours. Enjoy!"
Pumpkin Orange Cookie Recipe
Yield: 36-40 large cookies
Ingredients
- 2 C. butter
- 2 C. granulated sugar
- 1 C. brown sugar
- 2 eggs
- 2 tsp vanilla
- 1 29 oz can of pure pumpkin
- 2 tsp cinnamon
- 2 tsp nutmeg
- 1 tsp cloves
- 1 tsp baking soda
- 1 tsp salt
- Zest and juice of 2 oranges
- 2 C. chopped walnuts
- 5 C. all-purpose flour
Preheat oven to 375 degrees. In an extra-large bowl, cream butter and sugars with a hand mixer. Add in eggs, vanilla, pumpkin, orange zest, and orange juice. Mix until combined. Add spices, baking soda, and salt. Gradually add flour until mixed. Fold in nuts.
Drop by ice-cream scoop onto parchment-lined baking sheets. Bake at 375 degrees for 16 minutes. Cool. Drizzle with orange glaze.
Orange Glaze:
- Zest and juice of 1 orange
- 3 TBS butter softened
- 1 tsp vanilla
- About 3 cups of powdered sugar.
Mix. Add more powdered sugar to desired consistency.
