Super duper easy spinach side-dish:
Easy Spinach and Garlic Sauté
Substitute other greens if you like, although most will take a little longer than delicate spinach: kale, chard,
dandelion all make great side dishes.
Makes 4 servings
2 tablespoons olive oil
6 garlic cloves, thinly sliced
1/8 teaspoon crushed red pepper flakes
1 1/2 pounds fresh spinach
1/2 teaspoon sea salt
1/8 teaspoon freshly ground black pepper
Heat the oil in a large skillet over medium. Add the garlic and pepper flakes and cook, stirring
occasionally, until garlic just starts to brown, about 2-3 minutes.
Add the spinach and cook, tossing until spinach has wilted, 2-3 minutes. Remove from the heat and season with the salt
and pepper.
