One of the best ways to raise healthy eaters is to invite them to help in the kitchen. Here are some ways your kids can get involved at any age this :
- Ages 2-5: wipe tables, rinse produce, stir batter, name and count
foods, pour ingredients, scoop servings.
- Ages 6-8: prepare snacks like toast or cereal, crack and beat eggs,
toss a salad, read recipes, write out the grocery list.
- Ages 9-12: use knives to cut easy-to-grip foods, knead dough, put
away leftovers, prepare simple recipes.
- Ages 12+: plan a dinner menu, use an oven or stove, use larger
knives, prepare more complicated recipes.

August’s recipe of the month is white beans! If you’re from Louisiana, chances are you’ve planned to cook white beans for dinner only to realize you forgot to soak them overnight. But did you know that an instant pot can take care of that step for you? This white bean recipe is perfect for the back-to-school season. It brings a homemade meal to your table without hours on the stove. Serve it over brown rice for an extra boost of fiber and to help keep blood sugar levels steady!

Ingredients:
- 1 (1 pound) package great northern beans
- 1 tablespoon olive oil
- 1 onion, chopped
- 1/2 cup green bell pepper, diced
- 2 stalks celery, diced
- 8 ounces ham or seasoning meat, chopped
- 5 cups low-sodium chicken broth
- 1 teaspoon ground thyme
- 1 1/2 teaspoons garlic powder
- Salt and pepper to taste

Instructions:
1. Rinse and sort beans. Remove any small stones or debris.
2. Choose sauté on the instant pot and add oil. Add onion, bell pepper and celery, and sauté for 2 minutes. Add ham or meat and sauté for another 1-2 minutes.
3. Add beans, broth, thyme and garlic powder to the pot. Stir well.
4. Turn sauté mode off. Cover instant pot, twist to lock the lid, and turn the valve to sealing. Press the beans/chili button or use manual mode and set to 30 minutes.
5. When the timer beeps, allow the pressure to release naturally for 20 minutes. Then turn the valve to venting.
6. Remove lid and use a spoon or potato masher to mash beans to desired creamy consistency. Add salt and pepper to taste.
7. Serve over hot cooked rice.

LSU AgCenter Nutrition and Community Health Agent Justine Ramsey recently partnered with the Beauregard WIC Clinic to host a food demonstration highlighting the power of beans. During the session, Justine prepared delicious bean patties while sharing practical tips on nutrition and healthy eating.

The response was overwhelmingly positive—100% of attendees said the class provided valuable nutrition info, and 80% learned a new skill they plan to use. Parents and WIC staff especially loved seeing the kids enjoy the bean patties!

Justine plans to return quarterly, so be sure to ask about her next visit when scheduling your WIC appointment—space is limited.
