I am working on remaking the diabetic cooking videos I filmed for Tufts Medical Center in 2015. They have been lying in my hard drive for all these years and actually are excellent resources for patients with DM or anyone who want to cook healthy in general. My mom used 12 types of ingredients to cook this dinner on a regular week day, not even counting all the condiments. A traditional home made Chinese meal is full of fresh vegetables, legumes, lean proteins and full of flavors. Food and cuisine is such an important part of our rich culture. Weight control has been the #1 issue I worry about during my pregnancy. Being petite and wanting a natural birth, I try so hard to control my weight gain within the recommended range so that my baby won't grow too big. But even as a dietitian myself, I struggled so much to control my weight! You can see from the graph that my weight trend has been always on the top of the recommended range.

My obstacle is the cravings for sugar. I have always been a dessert lover. During my 2nd trimester I try very hard to limit my sugar intake, but every 2-3 day I would have a mentally weak moment and binge a large portion of dessert. Then afterwards I feel so guilty and blue for a while.

After realizing it just doesn't work to over limit myself, in the past few weeks I start to allow myself small portions of sweet foods every day. In the same time I slows down my chewing so that every meal will last more than 20 minutes. Surprisingly I feel much fuller, more satisfied, and my weight gain also slows down. Also I feel less guilty and my craving is not as strong as before.

Happy 4th everyone! After the heavy BBQ last night, I'm having something light for breakfast.

This egg shrimp taco takes only 5 minutes - 1. saute the frozen shrimps in heated pan until they are pink. 2. add in lightly beaten egg and sliced leek. 3. saute until the eggs are cooked and put it on the taco shell. 🌮🌮

My husband added shredded cheese in the taco as well, which was delicious too. I think some ketchup might work as well 😊😊🍅

The answer is not at all! As I used whole grain bun, black bean veggie burger patty, low fat cheese and fresh sliced tomato to make this yummy thing. Depends on my mood, sometimes I throw in a couple pieces of pickles and a little bit of mustard. My breakfast is overall low fat, high protein and high calcium even with a burger 😊👍🍅🥛

Do you know most produce loses 30% of nutrients 3 days after harvest? Vegetables could lose 15% to 55% of vitamin C within a week. Buy from farmers market or grow your own produces means there is no time wasted in the supply chain and the store, so that you can absorb as much nutrients as possible from your vegetables and fruits. 🥗🥦🌶🥕🍄🍉🍇

The CSA shares of Waltham Fields community farm officially started last week, and we enjoyed cooking and eating all the fresh and crispy greens!! 🥬🥬

We got Kale, Collard green, Lettuce, Radishes and Green Garlic last week. Several dishes we made are: radish salad, sauteed collard green, lettuce wrap for BBQ beef patties. Everything is so delicious 👍👍😊😊🥗🍔
