Despite what this looks like from far away (💩) these Quinoa Truffles are a nutritious snack option for all the chocolate lovers out there!
Quinoa is a protein-packed, naturally gluten free grain, high in fiber, antioxidants, and vitamins. No wonder it’s referred to as a “superfood”!
Recipe from the book “plantyou” by Carleigh Bodrug.
INGREDIENTS:
1/4 cup dates
3/4 cup cooked and cooled quinoa
1/2 cup flaxseed
1/4 cup cocoa powder
3 T tahini, or other nut/seed butter
2.5 T maple syrup
1 tsp vanilla
1 T brewed coffee (optional)
Coating (optional): 1/4 cup cocoa powder
1) Soak dates in hot water for 5 mins, drain
2) In a food processor combine ingredients until smooth
3) Form 8-12 truffles with hands, roll in cocoa powder if desired
