Grand Forks City & County Employee Wellness Program This program provides various health and nutrition services for all city and county employees.

Program participation includes several benefits including bonus vacation hours, BCBS Wellness benefits, and reduced fitness center membership rates.

March's recipe is Loaded Potato Soup!
Ingredients:
4 medium potatoes (about 4 cups, white or red), peeled and cubed
1 medium onion, chopped
1 teaspoon garlic powder
1/2 teaspoon ground black pepper
2 cups low sodium chicken or vegetable broth
1 cup frozen peas
1 cup nonfat milk
3/4 cup shredded cheddar cheese
Instructions:
1. Combine potatoes, onion, garlic powder, ground black pepper, and broth in a large saucepan. Cover and cook over medium high heat until boiling.
2. Reduce heat to medium. Simmer until potatoes are tender, stirring occasionally (12-15 minutes).
3. Use a potato masher or fork to slightly mash the potatoes. This will also thicken the soup. There should still be pieces of potato in the soup.
4. Stir in the peas, milk, and shredded cheese. Cook and stir until the cheese is melted (3-4 minutes).
5. Garnish with your toppings of choice (suggestions: green onions, shredded cheese, crackers) and serve!

February's Recipe is Cranberry Oatmeal Bars!
Ingredients:
1 cup dried cranberries (consider lower added sugar version)
3/4 cup brown sugar
1/2 cup oil
2 eggs
1 1/2 cups all purpose flour
1 1/2 cups quick cooking oats
1 teaspoon baking powder
1/4 teaspoon salt
1/4 cup chopped nuts (optional)
Instructions:
1. Preheat oven to 350. Spray a 9x13in baking pan with nonstick cooking spray.
2. Finely chop the dried cranberries.
3. Beat together brown sugar, oil, and eggs using a whisk or electric mixer in a large mixing bowl.
4. Stir together flour, oats, baking powder, and salt in a medium mixing bowl.
5. Stir dry ingredients into wet ingredients until combined.
6. Stir in cranberries and nuts. Spread the dough evenly in the pan.
7. Bake until lightly browned and the center is set (about 20 minutes).
8. Cool completely before cutting.

January's recipe is White Chili!
Ingredients:
1 whole boneless, skinless chicken breast (2 breast halves), cubed
1 cup onion, diced
4 cups reduced sodium chicken broth
2 cans (15 oz each) white beans (drained and rinsed) (cannellini, great northern)
2 cans (4 oz each) diced green chiles
1 1/2 cups frozen corn
1 teaspoon garlic powder
1 teaspoon ground cumin
1/2 teaspoon dried oregano
Instructions:
1. Spray a large saucepan with nonstick cooking spray. Heat the saucepan over medium high heat. Add cubed chicken and diced onion. Cook and stir for 5 minutes.
2. Add chicken broth, white beans, diced green chiles, frozen corn, garlic powder, ground cumin, and oregano to the saucepan. Heat until boiling. Reduce heat to medium.
3. Cook until chicken is cooked to 165 (15 to 20 minutes). Stir occasionally while cooking.
4. Use a potato masher to slightly mash beans to thicken the chili, if desired.
5. Serve plain or with shredded cheese, sour cream or chopped veggies!
