Pepperoni Pizza Grilled Cheese

Ingredients:
4 slices of bread (white or your choice)
8 slices of pepperoni
1 cup shredded mozzarella cheese
2 tablespoons marinara or pizza sauce
2 tablespoons butter, softened
1 teaspoon dried oregano
1 teaspoon garlic powder (optional)
Directions:
Prepare the Bread: Spread butter evenly on one side of each slice of bread. This will be the side that crisps up in the pan.
Assemble the Sandwich: On the non-buttered side of two slices of bread, spread 1 tablespoon of marinara sauce each. Sprinkle half of the shredded mozzarella cheese over the marinara. Layer 4 slices of pepperoni on each sandwich. Sprinkle with a pinch of oregano and garlic powder (if using). Top with the remaining mozzarella cheese and close the sandwiches with the other slices of bread, butter side facing out.
Cook the Sandwiches: Heat a skillet or griddle over medium heat. Place the sandwiches in the skillet and cook for 3-4 minutes per side, or until the bread is golden brown and the cheese is melted. You may need to press down gently with a spatula to help the cheese melt evenly.
Serve: Slice each sandwich in half and serve warm with extra marinara sauce for dipping, if desired.
