Another quick breakfast recipe!! Do you or a family member not like eggs but looking to add more protein to your breakfast? Try making a fruit omelette.

you can use 2 to 4 eggs (depending on age and hunger 😉)
Separate the yolks from the egg white, whisk the egg white until fluffy and add a dash of maple syrup to the yolks.

Next using a spoon fold in the egg yolks to the whites and once combined add to a frying pan on the lowest heat (greased with a little coconut oil). Next add some fruit of your choice, I like to use berries.

Cook until you can see the sides have changed texture and you can either try flipping the omelette (use a spatula for this) or can place under the grill to cook the top (you will need to keep an eye on it at this stage to ensure it doesn't burn and shouldn't take more than a minute or two) again on a lower heat approx 150.

Serve on it's own or with some natural or plant based yoghurt or a drizzle of maple syrup if needed.
