Chia pudding is my favorite snack these days! Plenty of fiber and protein to keep me feeling full and energized. Recipe below 🍒
Cherry Chia Pudding
1 cup frozen cherries, slightly thawed
3/4 cup plain Greek yogurt
1-2 Tbsp maple syrup
1/2 cup coconut water
1/2 cup chia seeds
Topping suggestions: fresh berries, granola, nuts, whole grain cereal, mini chocolate chips, toasted coconut
Combine cherries, yogurt, maple syrup and coconut water in a blender. Blend until smooth. You want a very pourable consistency- like whole milk or a really thin milkshake - add extra splashes of coconut water if needed.
Transfer to a bowl and whisk in chia seeds. Divide into 3 or 4 containers, cover and refrigerate for one hour.
After an hour, uncover and give each a good stir to help distribute any seeds that sunk to the bottom. Cover and return to the refrigerator for at least 3 hours. Store in the fridge for up to 4 days. Serve with desired toppings.
Makes 3-4 servings.
