Our vegan wedding đŸ€

Last weekend we got married and all the food, from the rehearsal dinner to wedding dinner and dessert, was 100% vegan. We had around 100 guests all eating plant-based food 🙌

During the planning process, it was a no brainer we didn’t want any animals harmed in the making of our special day. ’s Plate Food Truck did a fantastic job of catering delicious jackfruit BBQ sandwiches or loaded potatoes with green beans, slaw, and jalapeño cornbread plus hors d'oeuvres. We had several guests that are meat eaters compliment the tasty food. For dessert, mini cinnabuns and a giant peanut butter cookie dough cinnamon roll from Cinnaholic. Their desserts are amazing and always vegan.

And yes, our dogs were also part of our special day. Dressed to the nines in their suits. They were up at the alter during our ceremony and spent the evening enjoying lots of pets and dances on the dance floor.

The venue we booked was awesome as well. We had a barn wedding that butted up next to a property with cows, horses, and goats. Guests loved visiting the animals throughout the night. 💕

Absolutely love the vegan options at this restaurant! All the sauces are plant-based and delicious! Plus they offer tofu and tempeh. The Take Out is becoming a regular stop when passing through West Virginia. We ate lunch then got dinner to go so we could eat more yummy bowls for dinner at our campsite.

We went to Colorado last week for a work/fun trip. Typically we look for local vegan restaurants to try out but this time we decided to go to the grocery once we landed and only eat food we made. We did this for two reasons, first because it’s way cheaper than eating out for every meal and second because it’s generally healthier to eat home cooked meals. We stayed in an Airbnb with a full kitchen which made it easy to prepare meals.

We were on the go each day for lunch so lunches consisted of PB&J’s on whole grain bread with natural peanut butter + fruit. Nothing fancy but it gets the job done. Plus who doesn’t love a good ole PB&J sandwich!

For dinner, my goal was to make meals that only took a few ingredients to prepare and were quick to make. We had pasta the first night, veggie tacos the second and this Asian inspired dish the last night. This dish consisted of baked tofu, premade udon noodles, a bag of frozen broccoli, a can of coconut milk, a can of chickpeas, and a jar of red curry paste (all found at Walmart). Just 6 ingredients and it tasted delicious! We also made basic salads to eat with dinner each night.

It can be challenging to stay healthy while traveling but with a little preparation, staying on track with your health goals doesn’t have to break the bank or be overly complicated.

My #1 tip for eating healthy while traveling is to plan ahead!

Sometimes it can be challenging to maintain a healthy lifestyle while out of our normal routine but with a little extra work, it is totally doable. Generally I meal prep some meals to take on trips but this time I only brought some fruit and a few snacks. Last week I traveled to the Carolina’s and West Virginia for work. I was very happy to find so many nutrient rich plant-based meals while on the road. I didn’t just stumble upon these places though. I took time to research the routes I was driving and searched for vegan food along the way. By typing in my destination on maps then searching for ‘vegan food’ on my route, I was able to find all these wonderful meals. By spending just a few minutes to plan ahead, I was able to eat lots of delicious food that made me feel energized and kept me on track for my health goals.

Day 2 cruise food. Let’s just say I didn’t go hungry! Seriously so many vegan options! My main goal was to make sure I consume plenty of nutrients with lots of fruits and veggies, enjoy the food, and quantity wise eat as much as my little heart desires đŸŒ±

So here’s what I ate


Breakfast- oatmeal with walnuts, almond slivers, pineapple and peanut butter

Snack- big plate of fruit

Lunch- started with a giant salad with lots of veggies then 2 veggie tacos with rice, black beans, and all the toppings I could find + chips and salsa. Then a little burrito bowl with garlic potato wedges on the side

Dinner - butternut squash soup, pea risotto and chocolate chip cookies + vegan ice cream for dessert
