Don’t throw away that leftover chicken! 🍗✨

Their bones (I cooked these this weekend!) are packed with nutrients and are perfect for making homemade bone broth—one of the simplest ways to nourish your body and reduce inflammation.

How to make it:
1️⃣ Save your leftover chicken bones (a rotisserie chicken works in a pinch but I
prefer to use a fresh organic whole chicken for pesticide/hormone free broth).
2️⃣ Place them in a pot or slow cooker and cover with water.
3️⃣ Add a splash of apple cider vinegar to help pull minerals from the bones.
4️⃣ Toss in veggie scraps like onion, garlic, carrots, and celery for extra flavor.
5️⃣ Simmer 12–24 hours (slow and low is best!).
6️⃣ Strain, store in the fridge, or freeze in glass jars for later. Keep the meat scraps
for soup, stews or casseroles.

“I don’t take care of my health just for me… I do it for moments like this.”

Three events. Endless walking. Standing on concrete. Keeping up with a college senior all weekend (and yes… more drinks in two days than I’ve had in months 😉).

And I felt good.

Not exhausted. Not sidelined. Not wishing I’d stayed home.

Just fully present — soaking in my senior’s world one last time before graduation.

Your health isn’t about a number on the scale.

It’s about having the energy and endurance to show up for your kids… and one day, your grandkids.

Don’t judge these muffins by their cover… 🫐

They don't look very colorful, but they have nature's perfect fruit baked inside of nutrient dense flour sweetened with coconut sugar. Use pastured eggs and grass fed butter to upgrade your healthy fats and you've got a winner! The lemon zest adds a flavorful surprise too!! So Yummy! 😋

Healthier Blueberry Muffins Recipe

What you’ll. Need:
2 cups all-purpose flour – I used Bob's Red Mill all-purpose gluten-free flour
1/2 to 3/4 cup coconut sugar
2 tsp baking powder
1 tsp zanthem gum
1/2 tsp salt
1/2 cup unsalted grass-fed butter, melted and cooled
2 large, pastured eggs
1/2 cup milk (whole, nut or full fat coconut)
2 tsp grated lemon zest
1 tsp vanilla extract
1 1/2 cup organic blueberries – fresh or defrosted & drained frozen

What to do:
Preheat oven to 375 degrees. Lightly grease a 12-cup muffin pan.
Stir together the five dry ingredients in a medium bowl.
Whisk together remaining wet ingredients in a large bowl.
Add dry mixture to wet mixture and stir until partially moistened.
Fold in blueberries until evenly mixed. Batter will be thick. Do not over stir.
Divide batter evenly between 12 muffin cups, filling each about ¾ full.
Bake 10 minutes. Rotate pan and continue to bake 10 more minutes or until golden brown and toothpick comes out clean.
Cool in pan for 3 minutes and move to wire rack to cool completely.
Enjoy!

When life feels harsh and heavy, you can endure it—and still bloom. 💪🌼

I just love that these Lenten roses (Helleborus orientalis) blooming in my front yard remind me of this each I drive into my driveway! They stand strong and keep shining despite the freezing temps and recent ice! Resilient. Steady. Unshaken.

I established Deep Health Consulting in late 2015 to help women who have put their families and responsibilities first for so long, it has taken a toll on their own health and happiness. I support them as they recover from health concerns related to neglect, stress and hormone imbalance. As a health coach, I offer education, goal setting, accountability and, most importantly, encouragement! Throughout the program, My clients are applauded for taking small, steady steps to gradual, long-term transformation.
