It is getting to be that time of year...crisp, cool air, colorful leaves, flannel shirts, hot soups and stews. I love Fall! This soup is very flavorful, versatile, and super easy to make.
Ingredients (serves 4)
3/4 cup chopped Spanish onion
2 teaspoons olive oil
2 1/2 teaspoons curry powder
4 cups sodium-reduced, nonfat chicken or vegetable broth
1 (15-ounce) can pumpkin
2 Idaho potatoes, peeled and cut into 1-inch cubes
1/4 cup chopped fresh cilantro
Toasted pumpkin seeds for garnish (optional)
Salt & pepper to taste
4 whole grain rolls
Directions
In a large saucepan, saute onion in oil 2 minutes. Add seasonings; stir to coat. Add broth, pumpkin, and potatoes, and bring to a boil. Reduce heat to medium, partially cover and cook 8-10 minutes, until potatoes are tender. Remove from heat and stir in cilantro. serve with rolls.
Therapeutic Use of Pumpkin
Pumpkin has a cooling nature and can be used to treat "damp" conditions such as eczema and edema. It helps regulate blood sugar and benefits the pancreas - it is used for diabetes and hypoglycemia. It promotes discharge of mucus from the lungs, bronchi, and throat. Regular use has been shown to benefit bronchial asthma.

Facial Rejuvenation
Facial Rejuvenation (often referred to as cosmetic acupuncture) combines moist compresses, massage, gentle acupuncture, and facial cupping to create healthier, younger-looking skin.
It is a holistic, non-surgical therapy that reduces the signs of aging by treating both the face directly and the underlying causes of aging. More than just a cosmetic procedure, it is a revitalization method that makes the whole person look and feel younger.
