So, aside from Irish heritage- why Irish Beef stew for our first cowboy style cook pop-up of the season?
**History Time**
The Irish are well represented in cowboy culture.
But other than Irish Stew, where the traditional mutton has been replaced by beef, few of their dishes have made it into Western cuisine.
Their contributions to cowboy music however were extensive. Celtic songs were rewritten with new lyrics all across the west. The famous song “The Streets of Laredo” uses the traditional Irish melody “That Bard of Armagh”
The most famous Irish cowboy was probably Tom O’Connor known as the “Texas Cattle King”, In 1834 a 16 year old O’Conner sailed from Ireland to Texas to accept a 4.428 acres land grand from the Mexican government arranged by his uncle, James Power. When the war exploded O’Conner fought for Texas against Mexico and was one of the signers of the Goliad Declaration of Independence and the youngest soldier in the Texas forces of San Jacinto.
The first Refugio County rancher to used barbed wire he and his son imported early drilling equipment and pioneered the drilling of artesian wells. They often struck oil. Turns out even Irish cowboys are lucky!
