These soft-baked pumpkin cookies are the perfect way to ease into fall—comforting, nutrient-dense, and kid-approved. 🍪

Why they’re better than your average cookie:
• Pumpkin is packed with Vitamin A, fiber, and antioxidants
• Almond flour = protein + blood sugar-friendly
• Coconut sugar adds sweetness without the spike

Pumpkin Spice Cookies

Ingredients:
1 cup almond flour
½ cup pumpkin purée
¼ cup coconut sugar (or maple syrup)
1 egg
1 tsp pumpkin pie spice
½ tsp baking soda
Pinch of salt

Directions:
