Slow Cooker Salisbury Steak

Ingredients
- 2 (10.75 ounce) cans condensed cream of chicken soup
- 1 (1 ounce) envelope dry onion soup mix
- ¼ cup all-purpose flour
- ¼ cup Italian seasoned bread crumbs
- 1 tsp Italian seasoning
- 2 pounds lean ground beef
- ¼ cup milk
- 1 tsp dried oregano flakes
- ½ tsp pepper
- ½ tsp thyme
- 2 tablespoons vegetable oil
- 1 cup water
- 1 (1 ounce) packet dry au jus mix

Preparation

In a large bowl, mix together the ground beef, onion soup mix, pepper, oregano, thyme, Italian seasoning, bread crumbs, and milk using your hands.

Shape into 6-8 patties. (I like them a little big, so I make 6.)

Heat the oil in a large skillet over medium-high heat.

Cover the steak patties in flour just to coat, and then place them into the heated skillet to quickly brown on both sides.

Place browned patties into the slow cooker stacking alternately.

They will stack on top of each other, so place them as evenly as possible.

In a medium sized bowl, mix together the cream of chicken soup, au jus mix, and water and then pour evenly over the patties.

Cook on the low setting for 4 or 5 hours, or high setting for 2-3 hours until ground beef is well done.

Serve with mashed potatoes, salad, and rolls.

Carrot Oat Muffins

Ingredients
- 1/4 cup of agave nectar
- 1 cup of organic applesauce
- 3 teaspoons of baking powder
- 1 teaspoon baking soda
- 3 cups of shredded carrots
- 1 teaspoon organic cinnamon
- 3 organic eggs
- 2 teaspoons of chopped ginger
- 1/2 teaspoon salt
- 1 teaspoon of organic vanilla extract
- 2 cups of organic whole oat flour

Preparation

Combine all dry ingredients in a bowl.

Combine all wet ingredients in a bowl except carrots and ginger and mix well.

Gently add dry ingredients to wet ingredients and mix until just blended. Be careful not to over-mix because this will result in hard muffins.

Once the wet and dry ingredients are blended, gently fold in carrots and ginger until spread throughout.

Spray muffin tins with nonstick cooking spray and add mixture to 2/3 of the cup.

Bake at 350F degrees for 20 minutes until golden brown on top.

Let cool in tins for 2-3 minutes before transferring to a cooling rack.

Asian Style Meatballs

Ingredients
- 1 lb. beef or pork
- 3/4 cup plain panko breadcrumbs
- 1 1/2 tsp garlic powder
- 1 tsp sesame oil
- 1/4 tsp ground ginger
- 1/4 cup sliced scallions
- 1 egg
- 1/4 cup water
- 1/3 cup hoisin sauce
- 2 Tbsp rice vinegar
- 1 tsp garlic powder
- 3 Tbsp soy sauce
- 1/2 tsp sesame oil
- a handful of sliced scallions

Preparation

Preheat the oven at 375F degrees.

Add the beef, panko, sesame oil, garlic powder, ginger, egg, scallion and water to a bowl.

Mix to combine.

Form into approx 1-1 1/2 inch balls.

Place on a parchment lined baking sheet.

Bake for about 15-18 minutes until lightly golden.

Add all the ingredients for the sauce to a small saucepan over medium low heat. Stir to combine and cook until warmed through.

Toss the cooked meatballs in the sauce.

Garnish with scallions.

Loaded with fresh herbs and veggies! 🍋🥕🫒

Broad Beans With Lemon & Thyme Vinaigrette

Ingredients
- 1 kilogram broad beans (in their pods)
- 1 packet bacon
- 3 tablespoons cold-pressed rapeseed (canola) oil
- 1 tablespoon lemon juice
- 1 tablespoon apple cider vinegar
- 1/2 clove garlic, grated
- 1/2 teaspoon dijon mustard
- 1/2 teaspoon honey
- handful fresh thyme, chopped
- salt and pepper

Preparation

Remove the beans from their pods.

Bring a pan of salted water to the boil.

Cook the beans for approximately 5 minutes, or until soft. When they are cooked, drain them and run the cold water over them for a minute or so.

Grill the bacon until crisp.

Whizz up the dressing ingredients in a blender.

Place the beans in a bowl and pour the dressing over them. Top with the bacon, either in crispy slices or chopped.

Cracked Wheat Cereal

Ingredients
- 1/4 C brown sugar
- 2 1/2 C cracked wheat
- 3/4-1 C raisins
- 1/4 t salt
- 20 packets of splenda
- 1 1/2 t vanilla
- 4 C hot water

Preparation

Crack wheat in a blender (skip this step if you bought cracked wheat).

Bring water, salt, vanilla and raisins to a boil.

Turn heat down to low.

Add cracked wheat, stirring to remove clumps.

Add sugar and splenda.

Cover, turn off heat and let sit for 10 minutes.

Avocado And Crawfish Appetizers

Ingredients
- 1 tomato
- 2 teaspoons sherry vinegar
- 1 teaspoon extra virgin olive oil
- salt
- 1/2 cup cooked and peeled crayfish tails
- 1 ripe avocado
- 1 teaspoon freshly chopped cilantro- optional

Preparation

Halve the tomato, scoop out and discard the seeds. Chop what is left and place in a bowl with sherry vinegar, olive oil and salt. Gently whisk.

Just before you are ready to serve, fold the crayfish bits into the tomato mixture.

Halve the avocado, remove the pit, scoop out some of the pulp and place spoons of the crayfish mixture inside.

Serve some of the leftover avocado on the side.

It can make a colorful and pretty presentation.

Turkey Ranch Blt

Ingredients
- 2 pita pockets
- 4 slices cooked bacon
- 1/2 cup spring mix greens
- 2 tomatoes, sliced
- 4 slices roast turkey
- 2 tbsp ranch dressing

Preparation

Brush the slices of turkey with ranch dressing.

Stuff each half of pita with a few slices of tomato, greens, a slice of turkey, and two slices of bacon.

Serve.

Pavlova

Ingredients
- 1/2 tablespoon cornstarch (corn flour)
- 4 large egg whites
- fresh fruit
- 1 1/2 tablespoons (20 grams) granulated white sugar
- 1 cup (240 ml) heavy whipping cream
- 1 cup (200 grams) superfine sugar (castor)
- 1/2 teaspoon pure vanilla extract
- 1 teaspoon white vinegar

Preparation

Preheat the oven to 250 degrees F (130 degrees C) and place a rack in the center of the oven.

Line a baking sheet with parchment paper and draw a 7 inch (18 cm) circle on the paper.

In the bowl of your electric mixer, with the whisk attachment, beat the egg whites on medium-high speed until they hold soft peaks.

Start adding the sugar, a tablespoon at a time, and continue to beat until the meringue holds very stiff peaks.

(Test to see if the sugar is fully dissolved by rubbing a little of the meringue between your thumb and index finger. The meringue should feel smooth, not gritty. If it feels gritty the sugar has not fully dissolved so keep beating until it feels smooth between your fingers).

Sprinkle the vinegar and cornstarch over the top of the meringue and, with a rubber spatula, fold in.

Gently spread the meringue inside the circle drawn on the parchment paper, smoothing the edges, making sure the edges of the meringue are slightly higher than the center.

(You want a slight well in the center of the meringue to place the whipped cream and fruit.)

Bake for 1 hour 15 minutes or until the outside is dry and takes on a very pale cream color.

Turn the oven off, leave the door slightly ajar, and let the meringue cool completely in the oven.

(The outside of the meringue will feel firm to the touch, if gently pressed, but as it cools you will get a little cracking and you will see that the inside is soft and marshmallow.)

The cooled meringue can be made and stored in a cool dry place, in an airtight container, for a few days.

Just before serving gently place the meringue onto a serving plate.

Whip the cream in your electric mixer, with the whisk attachment, until soft peaks form.

Sweeten with the sugar and vanilla and then mound the softly whipped cream into the center of the meringue.

Arrange the fruit randomly, or in a decorative pattern, on top of the cream.

Serve immediately as this dessert does not hold for more than a few hours.

Flavorful and delightful dessert! 🧀🍰🥚

Fromage Blanc Cheesecake

Ingredients
- 3/4 cup toasted almond brittle
- 3 inches s*t gelatin, softened cool water
- 3/4 cup graham cracker crumbs
- 1 1/2 cups heavy cream, whipped to stiff peaks
- 1 pound fromage blanc
- 1/2 cc sugar
- 2 cups sugar
- 113 grams (1 stick) unsalted butter, at room temperature
- 3/4 cup chopped white chocolate
- 6 yolks

Preparation

Combine the first four ingredients until well coated with butter.

Press into the bottom of the molds.

Chill.

Combine 1 cup sugar and fromage blanc in a large bowl, whisk over a hot water bath until sugar has dissolved.

Squeeze all water out of gelatin sheets and add to warm fromage mixture, stir until gelatin has dissolved.

Cool slightly over a water bath until slightly thickened.

Whip yolks in a mixer with a second cup of sugar until thick and pale, fold into a fromage mixture.

Fold in whipped cream.

Fill 4-inch ring molds, smooth tops and chill until set.

It's easy, versatile, hands off and freezer-friendly! 🐔🧄🌶️

Crockpot "Refried" Beans

Ingredients
- 1 tsp black pepper
- 2 tsp cumin
- 4 Tbsp. jarred minced garlic
- 1 large onion, chopped
- 2 lbs pinto beans
- up to 2 1/2 Tbsp salt
- 10 cups hot water

Preparation

Rinse the beans in a colander.

Pick out any bad beans.

Combine all the ingredients in the crockpot.

Remove any floating beans.

Cover, and cook on high for 4 hours and on low for 2 hours.

Uncover, and remove extra liquid.

Leave enough liquid to reach the desired consistency when the beans are mashed.

Mash beans with a potato masher to desired consistency.

Serve warm.

Store in air-tight containers in the refrigerator and use within 2 weeks, or freeze in ziplock bags for later use.

Full of warm, sweet spices, coconut and plenty of carrots! 🥕🍰🧀🥚

Carrot Spice Cake

Ingredients
- 1 cup unbleached all-purpose flour
- 1/2 cup whole wheat flour
- 1 cup evaporated cane juice (or substitute sugar)
- 2 tsps. baking soda
- 1/2 tsp. salt
- 2 tsps. ground cinnamon
- 1/2 tsp. ground nutmeg
- 3 T coconut oil, melted
- 1 large egg
- 1 T ground flaxseed + 1 T water (or substitute 1 egg)
- 2 cups grated carrot (about 2 large carrots)
- 1 cup canned crushed pineapple, drained
- 1/2 cup applesauce
- 1/2 cup golden raisins
- 2 T butter, softened
- 1 (8 oz.) block 1/3 less-fat cream cheese, softened
- 4 1/2 cups powdered sugar
- 2 tsps. vanilla extract

Preparation

Preheat the oven to 325F degrees.

Spray 2 9" round baking pans with cooking spray and dust with flour.

Combine flours, sugar, baking soda, salt, cinnamon, and nutmeg in a large bowl, stirring well with a whisk.

Combine oil and eggs; stir well.

Stir egg mixture, grated carrot, pineapple, and applesauce into flour mixture.

Pour batter into prepared pans.

Bake at 325F degrees for 35 minutes or until a toothpick inserted in the center comes out clean.

Let sit in pans for 5 minutes, then invert onto wire racks and cool completely.

For frosting, beat together butter and cream cheese until smooth.

Add powdered sugar and vanilla just until mixed.

Spread frosting between layers and then over cake.
