Arugula + Crispy Chicken Salad
Peppery arugula, fennel fronds, pickled red onions, toasted almonds, and buttermilk fried chicken, all finished with a roasted jalapeño vinaigrette made in house with avocado oil. No emulsifiers, no extra junk, just clean, bright flavor.
A quick note on the chicken: we’re frying it in Fera fruit oil, an expeller-pressed oil made from the fruit of the Oleifera x Guineensis palm grown in Colombia. It’s naturally rich in antioxidants, has a neutral flavor, and feels like a really thoughtful fit for the kind of food we want to serve. Crisp, rich, and still clean from top to bottom.
