Rejuvenation And Wellness, Inc. Guiding adults toward vibrant health through plant-based lifestyle changes. I've changed my life by accident in January 2012. This is not a diet.

I became pain free, migraine free, less bloated (joints and gut), healthier, happier, leaner (still a work in progress), energized, rejuvenated and well. January 2013 will be one year since I started my journey. This is a lifestyle. People who know me ask me how I did it. This is my favorite subject. I can talk about it all day. Buckwheat Sandwich Bread!!!

The recipe I used is from . Check out her website for this recipe and other wonderful recipes.

This bread uses only two ingredients (not including any spices you may want to add) . . . Raw Buckwheat Groats (I used ) and water, plus a little salt and whatever spices or add-ins you may want. It’s a two step process but well worth it.

I added other ingredients during the second ferment stage. I used Everything Bagel seasoning and some chopped up nuts.

I found a wonderful chia jam at called ! It’s made with whole ingredients, tastes delicious and saves me time in the kitchen because I don’t have to make chia jam myself!!

Baked Vegan Wonton Wrap Chips!

So easy to make for when you want something crispy, crunchy and healthy to eat.

I use store bought Vegan Wonton Wraps. Cut them on the diagonal and coat with many delicious flavors. I used Curry on this one, but have made these with their Smokey Barbecue as well as their Gilroy Garlic Balsamic. I bake in the oven at 350 degrees for a minimum of 10 minutes. I turn over halfway through. I have an electric oven so sometimes recipes take longer. Just watch your chips to make sure they’re not burning. They store well in a zip lock bag which you can refrigerate (they did not get soggy) or leave out on your counter or in your pantry.

I entertain A. LOT! Everyone in my circle are mostly carnivores and dairy lovers! It is what it is. They are extremely embracing of me and my lifestyle and for that, I truly appreciate each and every one of them. So when I entertain, I will make vegan meals and use my friends as guinea pigs for creations I create! Sometimes, they are 100% WFPB No Oil. Sometimes I will bend my own rules and use vegan processed products . . . I.E. vegan cheeses, vegan meats, etc.

This was a sausage and cheese back made with cheddar cheese and sausages. The trifecta of processed vegan foods! I have to tell you this dish was amazing!!! I didn’t hear one complaint about it being vegan!

I paired this dinner with a delicious green salad. On the side as appetizers we had hummus and fresh fruit as well. A good time was had by all!

This meal is though processed with oil.

SCOURED!

After trying the Kimbap from Trader Joe’s over 3 months ago, I’ve been craving it ever since to no avail. No matter which TJ’s I went to, near and far, they were always sold out.

Hello Chicago!!! I walked in on a whim and you did not disappoint! There you were in the frozen food department! Four vegan/vegetarian options and one fish option. I had to restrain myself from stocking up since I had no way to get them home on a plane. I bought 4 - the vegan and vegetarian ones. Two minutes in the microwave was all it needed! Pure deliciousness. Did not disappoint. And reasonably priced too. $3.99 per item!! They also had fresh made Kimbap as well! Enjoy!!

Black Bean Chili Soup

It’s been unseasonably cold here in the southeast so I decided to make some Black Bean Chili Soup.

I have NEVER successfully been able to make any type of bean from their dried state. I always relied on unsalted canned beans. They were quick and easy and just enough for any recipe I was making. I was determined to try one more time. I purchase some dried black beans, read the instructions and actually followed the instructions. Once the preliminaries were done, I proceeded to make the soup in my Instant Pot.

This recipe turned out really well and YES, the beans were cooked through!!! I just threw some things into the instant pot not having a true recipe for it. I used some veggie broth, some fire roasted diced tomatoes, cut up carrots, celery, onion, and potatoes and cooked at medium high for 15 minutes. I then let the pressure naturally release for 15 minutes and then manually released the rest of it. Served it over a bed of brown rice and enjoyed!!

Side note: to make meals easier, I will always have cooked brown rice as well as cooked quinoa in my fridge ready to go. They’re great for soups or salad bowls. I’ll also have lots of greens as well to add to soups and/or make salad bowls. Meals in minutes! I also will make enough food so that there are leftovers and easy to grab for lunch to bring to work, or for dinner when I’m too tired to cook. I got three meals out of this soup. Two dinners and one lunch!!!
