Vegetable stock making day! Don’t the veg look gorgeous….all from a local farm market where I live.
I don’t add any spices, I do that when I use it for whatever I’m making…..soup, stew, risotto etc.

Don’t you LOVE the smell of Indian spices? Garam Masala, Tumeric and Ginger, YUM. And the color of this dish….WOW!

I had a cauliflower and some butternut squash to use up so I made this curry with red lentils.

My take on a Nicoyan (Blue Zone in Costa Rica) Chunky Vegetable Soup.
Love all the color, hubby said it looks like a fruit bowl. 🤷‍♀️

I made some subs with the squash and added cumin, smoked paprika and a can of black beans.

Well we did it….hiked in 20 degree weather! Hard to get out there but definitely glad we did it. Michaux State Forest Appalachian Trail Chimney Rock Trail. 🥶

I had on three layers under my jacket, long un**es, two pairs of gloves, hat and a buff around my neck. We warmed up pretty quick once we started moving.

Hoping we get to use our boot spikes in the snow this year.

Hello! It’s been a minute and probably no one will see this (thanks algorithm) but these breakfasts were so pretty I couldn’t resist.

Avocado sourdough toast with red onion, sauerkraut and broccoli microgreens with a side of cucumbers and strawberries. 🥒🍓🥦

Breakfast veggie bowl: lightly steamed broccoli and cauliflower with cucumber, red onion, avocado, sauerkraut and broccoli microgreems. 🥑🧅

If you are trying to increase your fruit and veggies…this is a great start to your day!

For more protein you can add h**p seeds, pumpkin seeds and even some mashed white beans or tofu scramble.

Gosh…I haven’t posted since Sept.! (thanks to the algorithym no one will probably see this LOL!)

Anyway, I had a bunch of greens I wanted to use up so I washed, chopped and mixed them with some purple cabbage. Now I have greens ready for salads, soups or stir fry.

Took about 20 mins, that’s all!

I know what you are thinking…I can just buy premixed greens and you can, they are great. But, I will say I’d rather choose the greens I like, US grown and fresher.

Mix: spinach, lacinato kale, red russian kale, dandelion greens (bitter is good for the liver), radish greens, red cabbage.

I didn’t feel like doing it but like anything that is good for us that is hard or time consuming…you always feel good afterwards. I wish I didn’t work out said no one! 😉

Lastly, its about having healthy options available and ready to go. 🥬🥦🥕🫛

Vermont vacation…beautiful state!

Two tough hikes so far…Mt Hunger and Camels Hump…..alpine hike, got up above the tree line, interesting terrain changes as we asended, 2600’ foot elevation gain! 😳

Beautiful walking/biking/XC ski path in Stowe.

Going to Burlington today. We’ll see what adventure awaits!

Back to hiking after injuries….me, sprained knee and Bob, pulled back.

Short and sweaty (not sweet 😅!) Bob’s Hill.

Our “go to” when we want a shorter hike (3.5 miles) but really good workout…steep!

Grateful to have our health and healing quickly from injuries!

Thanks to keeping our bodies strong thru regular exercise and weight training. Not always fun but so important and worth it!
💪🥾🏋️‍♀️. Think longevity.
