Not only filling but chia pudding is a great way to fuel your day!!! 💪 chia seeds are loaded with fiber, protein, and omega 3s. This fall version of a chia pudding hits all the notes!!
Pumpkin spiced chia pudding
🎃 🎃 🎃
1/2 c chia seeds
1 1/2 c nut milk
1 c pumpkin purée
2-3 T maple syrup
1 T pumpkin spice
2 t cinnamon
1 tsp. Vanilla
1 scoop protein powder (optional)*

In a large Tupperware, mix together milk, syrup, pumpkin purée, pumpkin spice, and cinnamon. (*if using protein powder I’ll whisk that first with the milk to make sure it doesn’t clump and then add the rest of the ingredients).
Once mixed add in chia seeds and throughly mix with fork or whisk to prevent clumping. Refrigerate for at least 2 hours or over night. Everyone’s desired thickness is slightly different so you can add a tad bit of milk or a scoop of yogurt upon serving to get desired thickness.
Enjoy with your favorite toppings. I added banana, pecans and goji berries to this mix.
