Are you looking for a healthy meal that’s quick and easy on your budget? These black bean and broccoli quesadillas are a great way to add more vegetables and fiber to your plate. With canned black beans, fresh veggies and whole wheat tortillas, this recipe comes together in just a few simple steps. Mashing the beans helps hold everything together, while sautéed vegetables and melted cheese add nutrients and flavor. Use the recipe below or follow along as AgCenter Nutrition & Community Health (NCH) agent Jennifer Duhon shows you how to prepare this delicious recipe: https://www.youtube.com/watch?v=knwmdwDTGK8
Ingredients:
- 1 (15 ounce) can no salt added black beans
- 1 cup broccoli, chopped
- 1/4 cup bell pepper, chopped
- 1/4 cup onions, chopped
- 1/4 cup zucchini, chopped
- 4 ounces reduced fat cheddar cheese, shredded
- 4 (8 inch) whole wheat tortillas
- Nonstick cooking spray
Instructions:
1. In a large mixing bowl, mash the beans with a fork.
2. Spray a pan with nonstick cooking spray. Sauté broccoli, bell pepper, onions and zucchini on medium heat until tender.
3. Add cooked vegetables and cheese to beans and mix well.
4. Spray a pan with nonstick cooking spray and heat on medium heat.
5. Lay out one tortilla in the pan. Spread 1/4 of the bean mixture on half of the tortilla. Fold the other half over.
6. On medium heat, cook each side until lightly browned, about 3-5 minutes. Repeat for each tortilla.
7. Cut each quesadilla in half and serve.

One of the best ways to raise healthy eaters is to invite them to help in the kitchen. Here are some ways your kids can get involved at any age this :
- Ages 2-5: wipe tables, rinse produce, stir batter, name and count foods, pour ingredients, scoop servings.
- Ages 6-8: prepare snacks like toast or cereal, crack and beat eggs, toss a salad, read recipes, write out the grocery list.
- Ages 9-12: use knives to cut easy-to-grip foods, knead dough, put away leftovers, prepare simple recipes.
- Ages 12+: plan a dinner menu, use an oven or stove, use larger knives, prepare more complicated recipes.

1. Model healthy eating: Try offering a variety of fruits and vegetables throughout the day.
2. Move more together: Go on a walk, ride bikes, or visit a local park as a family.
