Chicken Fajita sheet pan dinner! Great way to use up fresh veggies. Pop some tortilla wraps in the oven to warm up them up! Also, don’t forget to add a fun white sauce (mix 1:1 ratio Greek yogurt, Mayo & taco seasoning to taste!)

SOUP!! It’s winter & soup is a great way to pack in nutrition. Hint take your favorite soup growing up & slowly pack more nutrition into a soup you already love 🍲 🥕

Ingredients for above soup pictured:
Tomato juice-low sodium V8
Pasta (any Type)
White beans
Spinach
Top with Parmesan cheese

*adjust ingredients based on your nutritional goals

Looking for easy go to breakfast that is packed with protein & veggies? These egg muffins will quickly become a favorite!

Ingredients:
6-12 eggs
1/4-1/2 cup milk, optional
1/2-1 cup veggies finely chopped (spinach, peppers, mushrooms, tomatoes, onions)
1/2-1 cup shredded cheese

Directions:
1) Preheat oven 350 degrees
2) Stir eggs, beat together
3) Add veggies mix well
4) Add 3/4 of cheese
5) Mix well
6) Add to muffin tin (spray tin or use muffin tins)
7) add remaining cheese on top
8) Bake 20-25 minutes
9) leftovers keep in fridge 2-3 days or freeze

Looking for an easy Friday night dinner try this pan sheet chicken fajitas!

Ingredients
-1 # chicken (can substitute fish, beans, tofu)
-2 peppers sliced
-1 onion sliced
-2 tbsp avocado oil or olive oil
-Seasoning mix 1/2-1 tbsp each seasoning depending on your preference (garlic powder, cumin, chili powder, oregano, onion powder, salt & pepper)
-White sauce (optional)
Sour cream, Mayo (1:1 ratio)
Use seasoning mix that you add to the chicken & veggies
1-Fresh Avacado (optional)
6-8 tortillas flour or corn

Cooking instructions
Preheat oven to 400 degrees
-add chicken & veggies to your pan
-add 2 tbsp of oil & seasoning (mix well)
-spread veggies & chicken in an even layer in your pan
-cook for 10-15 minutes check internal temp of chicken for at least 165 degrees if not, cook longer
-add to your tortillas (warming tortillas as desired)

White Sauce
-use left over seasoning from your fajita & add it to sour cream/Mayo 1:1 ratio depending how much you would like per taco (Can choose diary free options)
TIPS
*if your chicken is uneven use a meat pounder to create even pieces prior to cooking
*to meet your specific nutrition goals adjust portions, type of protein, veggies & tortillas you choose

Swapping out chicken or beef broth with vegetable broth is a great way to decrease your animal protein in your meals! These 2 brands are low in sodium & no added phosphates! Trader Joe’s brand list the amount of potassium so if you need to limit potassium grab this one! You can always make your own from scratch too!!!
