Banana Oat Blender Pancakes (for baby and the whole family) 🥞

Perfect for baby-led weaning or a healthy family breakfast! Made with simple, whole-food ingredients these pancakes are soft, nutrient-dense, and naturally sweet.

Ingredients:
• 1 medium banana
• 1 egg
• 3/4 cup organic gluten-free oats
• 1/2 tsp vanilla extract
• 1/2 tsp cinnamon
• 1/2 cup milk (can use breastmilk, formula, regular grass-fed organic milk, or plant-based milk of choice)
• Optional handful of spinach
• Optional baking powder
• Unsalted grass-fed butter for cooking

Directions:
1. Blend banana, egg, oats, vanilla, cinnamon, milk, and (optional) spinach together.
2. Melt butter on a pan over medium heat, then cook pancakes on each side.
3. Let cool and serve!

Cook once, eat 10 times 😂 these 4-ingredient broccoli tots were a hit with my 9-month old daughter!

Ingredients:
* 2-2.5 cups frozen broccoli
* 1 egg
* 1/4 cup buckwheat flour (or any flour of choice)
* 1 cup shredded cheese
* (optional) onion powder
* (optional) salt and pepper

Directions:
1. Steam broccoli until very soft.
2. Preheat oven to 400°F.
3. Chop broccoli to desired size (by hand or in food processor). If you have a younger baby, you may want to chop into finer peices.
4. Add all ingredients into a bowl and mix well.
5. Line a baking sheet with parchment paper.
6. Shape broccoli mixture into small ovals and line on baking sheet.
7. Bake in oven for about 20 minutes until golden brown.
8. Let cool and serve!

*You can stick the whole baking sheet in your freezer until frozen then transfer into a freezer-safe bag or container.

Looking to batch cook a protein and veggie rich breakfast, with minimal effort? This veggie frittata is packed with flavor and serves 2-4. Pair with some avocado (and maybe some sourdough toast) for a delicious, complete breakfast 🍳🍃🧀

Ingredients:
• 1-2 tablespoon olive oil
• 1/2 yellow onion, diced
• 6 cups roughly chopped fresh spinach (or 3 cups frozen spinach)
• 1 teaspoon salt
• 1 teaspoon garlic powder
• 1 teaspoon dried herbs (parsley, basil, rosemary are all great!)
• 4 large eggs, beaten
• 1 ½ cups milk (regular or nut/seed milk)
• ½ cup feta cheese (optional)
1 teaspoon dried red chili flakes, for sprinkling (optional)

Directions:
1. Preheat the oven to 400°F.
2. Heat oil in a 12-inch cast iron skillet over medium-high heat and sauté the diced onions for approximately 5 minutes until they are translucent.
3. Add the fresh spinach to the skillet and sauté for 2 minutes until it is wilted. Add salt and herbs, mix well. Then remove from the heat.
4. Whisk the beaten eggs and milk together in a medium bowl until combined. Next, add the egg-milk mixture and cheese to the skillet, mixing well until ingredients are well distributed.
5. Bake on the middle rack of the oven for 25 to 30 minutes until the frittata is firm.
6. Garnish with a sprinkle of red chili flakes before serving if you like a bit of heat.
