This is one of my very favorite breakfasts!! It's a spin off of a recipe in the first THM book, and it's a perfect re-fuel after a workout or run or when you just need a XO breakfast!

I use 1/2 cup of leftover cooked oatmeal, and mix well with 2 whole eggs, shredded or cubed cheese of choice (I used Manchego), and salt and pepper. Melt butter in a skillet and spread the mixture out into a pancake-type shape. Cook on both sides till browned and cooked through.

I love with hot sauce, or kimchi-style sauerkraut! Yum!! 😋

If you're like me, you have been feeling the squeeeeze of the grocery budget with the cost of food continuing to rise. And I understand how tempting it is to buy "cheaper" "foods"! But I'm using the " because....they are not cheaper, not in the long run!! And...many of them hardly qualify as "food"! But even with higher food prices, there are still nutrient-dense choices available with lotsa bang for your buck!

One of my favorites is...cabbage!! Rich in Vitamin C, helps reduce Inflammation, good for your heart...and you can eat it raw in a crunchy, refreshing salad, or cooked in a yummy sauté! My two favorite ways to cook it are in Egg Roll in a Bowl (many variations to this available online!) or sauteed with onions and chicken sausage! Yum 😋!!
