Eating well doesn’t have to require hours in the kitchen every day! Check out this quick and easy fish taco recipe that uses pre-made fish filets to cut down on prep time. Dietitian Jumana uses @traderjoes Oven Ready Breaded Cod Filets 🎣

Quick-and-Easy Fish Tacos:
Serves: 2
Ingredients:
• 6 oz. store-bought breaded fish fillets, cooked
• 1 ½ cups delicate salad greens (arugula, watercress, pea shoots)
• 1 Tbsp extra-virgin olive oil
• ½ fresh lemon
• 1 tsp Kosher salt
• 6 Tbsp low-fat plain Greek yogurt
• 2 Tbsp hot sauce (any variety)
• 6 (4-in) corn tortillas 
• ¼ cup pickled red onions
 
Instructions:
1. Prepare fish fillets according to package instructions.
2. In a medium bowl, combine salad greens with olive oil, lemon juice, and salt. 
3. Next, place corn tortillas on a microwave-safe plate, top with a damp paper towel, and microwave on high for 30 seconds.
4. In a small bowl, combine Greek yogurt with hot sauce and mix well.
5. Arrange three corn tortillas per plate and divide ingredients evenly per taco: salad greens, fish fillets, yogurt sauce, and pickled red onions.
6. Enjoy immediately!

Mediterranean Summer Tuna Salad
Serves 4
Ingredients:
• 1 (5oz) can tuna (in water or olive oil), drained
• 1 cup grape tomatoes, sliced in half
• 1 large English cucumber, large diced
• 1 large green bell pepper, large diced
• 1 cup green leaf lettuce, roughly chopped
• 4 small radishes, thinly sliced
• ¼ cup kalamata olives
• ¼ cup crumbled feta cheese
• ⅛ cup fresh mint leaves, roughly chopped
• ⅛ cup fresh chives, roughly chopped
• Juice of one fresh lemon
• 1 Tbsp red wine vinegar
• 4 Tbsp extra-virgin olive oil
• 1 tsp Kosher salt

Instructions:
1. Combine all ingredients in a large bowl and mix well.
2. Enjoy with pita bread/chips on the side!

A deliciously refreshing end to a long week. Cherries and a lime in mine 🍒

White Wine Spritzer
Serves: 2
Ingredients:
- 10 oz. chilled white wine (any variety works)
- 1 (12-oz.) can chilled seltzer water (flavored or unflavored)
- 4 wedges of fresh lime
- 4-6 fresh mint leaves (optional)

Directions:
1. Divide wine into two wine glasses.
2. Top each glass with half can of seltzer water.
3. Squeeze the juice of one wedge of lime into each glass and garnish the glasses with the other two wedges.
4. Add fresh mint to glass (optional) and serve.

Sick of plain grilled chicken? Try this simple recipe to spice things up

Grilled Lemon Turmeric Chicken
Serves: 4
Ingredients:
- 1 lb. chicken tenders or skinless, boneless breasts cut thin
- Juice of one lemon
- 2 garlic cloves, minced
- 1 tsp ground turmeric
- 1 tsp Kosher salt
- ¼ tsp freshly ground black pepper
- 2 Tbsp olive oil
Directions:
1. Add all ingredients to a large disposable plastic bag or container and mix to combine.
2. Marinate for 1 hour in the refrigerator.
3. Heat the grill to medium-high, direct heat. Scrape the grill grates clean if needed.
4. Add the chicken to the grill and let cook for 10 minutes before flipping.
5. Cook for an additional 10 minutes on the opposite side.
6. Discard the leftover marinade.
7. Serve chicken hot off the grill or let cool and refrigerate for serving cold the next day. Optionally, top with additional fresh lemon squeeze and drizzle of olive oil.

There is nothing worse than going to make dinner and finding your produce slimy or with little spots of mold. Especially now with trying to do larger and less frequent grocery shopping trips, I had lost more than a few servings of vegetables until I found these Rubbermaid Food Saver containers! This guide by @deepaviyer for @buildingmovementproject has been floating around for a few months now in the social justice sphere. A friend shared it to her stories today and I remembered how useful a resource it is in this current moment (of what some might feel to be overwhelm) as a way to strategize and revision what being an active participant in a movement could look like. I never want to say people ‘should’ do a thing without then providing tangible material to reflect on about how. Our roles as change makers in this current time are directly related to our access, our gifts, and our skills. There are many roles here that I once didn’t think could be enough for creating change, but that would only be true if we were focused on individuals. The reality is the movement is a body composed of different parts and each of those parts are necessary in the function of the whole. Everyone can’t be on the frontlines. Some of our disabled, immunocompromised and elderly community members are part of this group. Neither can every person be any other one of these roles. If everyone is telling stories, rarely does any work get done. Things change when we align our gifts for a greater purpose. When we offer ourselves and combine our varied strengths. I have been appreciating how folks have been coming together to offer healing services, free herbal medicine, creating models of what equity can look like, protesting, divesting, redistributing wealth, making art, writing songs and poems not only about what we can no longer accept but also where we are headed. There is so much being done and so many ways to get started. I am going to link to the article by Deepa and a pdf guide for you to print on the links page of my website found in my bio. Sending love and strength as we destroy and dream and build.

One of our AHB Rockstars posted this the other day... As her trainer, how would you expect us to respond?

"GO WORK OUT!"?
"No excuses! JUST DO IT"?
"You have to EARN your bikini bod before a beach trip"?

Nope... none of the above. Instead we had a conversation about motivation and why she didn't feel like working out.
•Would a (appropriately socially distanced 😉) trip to the beach help her reset mentally? Maybe it's a mental health over physical workout kind of day.
•How had her consistency been the rest of the week? Sliding for several workouts in a row is an indicator of a bigger issue vs just an off day.
•Would a short, quick workout and then the beach be a good compromise? Sometimes just getting started with a workout is the hardest part and not feeling like you HAVE to workout for a full hour helps.

In the end, she decided that she was tired, but the kind of tired that may actually be helped by the energy you get from a workout. So she did one of our short pre-recorded workouts and felt better after!

The message about exercise often gets distorted and often it is done by the fitness industry. We start to feel like we have to workout every day, that if we don't do a workout we failed at something, that our trainer is going to be mad at us for skipping. As a trainer, I can guarantee you that sometimes a mental reset and opting for the beach trip is just what you need. If more days than not you are moving your body, you're doing ok.

When you are having these moments of struggle I recommend a quick self check in. (And trust me we all do) Why don't I want to exercise? What are my goals? Would I feel better if I did exercise? Would a different type of exercise than I planned on be a better option for me today?
