Warm up with Winter Squash during these cold days of Winter with this Butternut Squash Saute!

Spiral butternut squash or use a peeler to create some ribbons. Cook it up in a saute pan with some avocado or olive oil and red onion or shallots, dried sage or thyme, sea salt and pepper. For the last few minutes add baby spinach or arugula to get a little green in there until it wilts. Serve with crumbled goat cheese and dried cranberries.

What's your favorite way to enjoy a little bit of chocolate for Valentine's Day or really anytime?!

The chocolate mousse, which was posted here last week, is definitely a winner!!!

Here's another easy chocolate treat you'll enjoy! This is one of the quickest and easiest ways to make and enjoy chocolate on Valentine's Day! Who doesn't love chocolate bark?

Tip: For milk chocolate, add 1 tablespoon at a time of room temperature milk or almond milk, until it reaches the desired taste you prefer.

Add the coldest ingredients in this recipe (maple syrup and milk last unless they're at room temperature otherwise as you're mixing it, the mixture will solidify too quickly before you pour it on the parchment paper.)

Have your toppings all ready to go before mixing the all the ingredients together.

A great go to is chocolate mousse! I use avocado, which is at the top of the list for getting in your healthy fats!

High in antioxidants! One cup of dry, unsweetened cacao powder has 22 calories, 11 grams fat, 33 grams fiber, 2 grams sugar, 20 grams of protein, 13% calcium and 77% iron.

Studies show chocolate raises your serotonin levels and affects your mood!

Do you find it a challenge to want to have salad during these cold winter months?

When you add root vegetables to brighten up your salad and feel satisfied, you may be more likely to want to have that salad!

Beets have some great nutritional benefits! Roast them in the oven (or even steam them), cut them up and add to your salad. You can even peel them raw and grate them too!

Another way to enjoy beets while they're hot out of the oven is to add olive oil, balsamic vinegar and sea salt for a quick side dish!

Kale anyone?

Kale is one of the best nutrient dense dark green leafy vegetables and most of the year is readily available.

One of my favorite ways to enjoy kale is in a salad and for Fall in a Kale Apple Salad with Maple Pecans. Kale is usually massaged with olive oil, lemon juice or apple cider vinegar. From there you can add a dressing with Dijon, Maple Syrup, Chopped Shallots and add sliced apples and maple pecans. For the pecans, bake them with maple syrup, salt and pepper.

A great way to enjoy the Fall flavors!
