Artichoke lovers Spring is a great time for artichokes!

I remember growing up in our Greek Italian household smelling the aroma of fresh artichokes steaming with lemon, garlic and fresh herbs! Of course so delicious as they're served with a lemon dipping sauce!

These days with being busy, we can find marinated artichokes in the salad bar or prepared foods section at your local grocer. For a real quick addition of artichokes to a meal, artichoke hearts work as well easily found in the grocery isle.

Tip: Add a different vegetable to your garden salad that you're already having at your next meal. It can be red onion, bell pepper (yellow for a different color) or even some grape tomatoes.

March has arrived and Spring is almost upon us! Finally!!!

I'm starting to see some Spring vegetables in the markets. A great transition vegetable is fennel. Have you tried fennel?

A quick way to enjoy it with your dinner is roasting it with carrots and onions with olive oil, salt and pepper. Fennel takes on a sweeter flavor when it's made this way.

Fennel is a good source of Vitamin A, vitamin C and fiber.
