Kitchari: A Traditional Ayurveda Dish 🫚
Feeling heavy or just need a reset? Kitchari is—nourishing, easy to digest, and packed with balancing benefits for all three doshas. 🍲
✨Benefits of Kitchari:
Supports digestion and detoxification— great for spring!
Strengthens Agni (digestive fire) for better nutrient absorption.
The Recipe:
4 cups of broth
½ cup basmati rice
½ cup mung beans (soaked overnight)
1 tbsp ghee (or coconut oil)
1 tsp cumin seeds
1 tsp coriander
1 tsp turmeric
½ tsp ginger
½ tsp fennel seeds
1 cup chopped seasonal veggies (carrots, zucchini, celery, kale, or broccoli.)
Salt and pepper to taste
Directions:
1. Rinse the rice and mung beans. *soak mung beans overnight.
2. In a pot, heat ghee, then add cumin seeds, turmeric, ginger, coriander and fennel. Sauté until aromatic.
3. Add the rice & (soaked) mung beans— coat in ghee & spices. Add broth and veggies then bring to a boil, then reduce heat to a simmer. (approx 20-30 min)
4. Salt & pepper to taste— Serve warm.
✨ Garnish with toasted sesame seeds or fresh herbs if desired.
