OLD FASHIONED BEEF STEW
Ingredients:
2 pounds beef stew meat, cut into 1-inch cubes
Salt and pepper, to taste
2 tablespoons all-purpose flour
2 tablespoons olive oil
1 large onion, chopped
2 cloves garlic, minced
4 carrots, peeled and chopped
3 potatoes, peeled and chopped
2 cups beef broth
1 cup red wine
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 bay leaf
Instructions:
Season the beef with salt and pepper and toss it with the flour to coat.
In a large Dutch oven or heavy pot, heat the olive oil over medium-high heat.
Add the beef to the pot and cook until browned on all sides, about 5 minutes.
Remove the beef from the pot and set it aside.
Add the onion and garlic to the same pot and cook until the onion is translucent, about 5 minutes.
Return the beef to the pot and add the carrots, potatoes, beef broth, red wine, thyme, rosemary, and bay leaf.
Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for 2 to 2 1/2 hours, or until the beef is tender.
Serve the stew hot with crusty bread or over mashed potatoes.
