Today the U.S. is the fourth ranked country in the world growing watermelons with 44 states growing the fruit, predominantly in Florida, Texas, California, Georgia, and Arizona. Watermelons are grown in rows in sand or sandy loams. Bees pollinate the watermelon plant and one month later a vine is produced. A melon is produced and is ready to be harvested within 90 days. The harvest is done by hand due to the watermelon's fragile surface. The peak production occurs in May, June, July, and August, but watermelons can be found from April through November. There are many varieties of watermelons and 1200 varieties are grown worldwide. In the United States, about 200-300 varieties can be found of which 50 are popular.

Store Peaches Well, Waste Less

*Store peaches at room temperature until ripe. To ripen faster, store in a closed paper bag. To speed ripening even more, add an apple or banana to the bag
*Refrigerate ripe peaches in a container with airflow. Use within 3-5 days
*Gently rub peaches under cool running water just before eating
*To reduce browning, cut peaches just before serving or dip pieces into water with lemon juice (1 cup water to 1 Tablespoon lemon juice)
*Freeze peaches for longer storage. Put pieces on a baking sheet and freeze until firm. Move pieces to labeled freezer containers and use within 8-12 months.

Peach peels are an abundant source of fiber and vitamin C. Vitamin C helps build your body’s natural immunity to sickness. Peaches are naturally low in calories, fat, and sodium. One raw medium peach (147 grams) has 50 calories, 0.5 grams of fat, 0 grams of cholesterol and sodium, 15 grams of carbohydrate, 13 grams of sugar, 2 grams of fiber and 1 gram of protein. It provides 6% of your daily vitamin A needs and 15% of daily vitamin C needs. One medium peach also contains 2% or more daily value of vitamins E and K, niacin, folate, iron, choline, potassium, magnesium, phosphorus, manganese, zinc and copper.

*Although a bright red blush gives a peach its attractive appearance, it is the progression of the background color from green to cream or yellow that is the best indication of a ripe, flavorful peach.
*A firm-ripe peach, which gives only slightly when gently squeezed, is best for canning, freezing, or storing without bruising.
*A soft-ripe peach is excellent for eating immediately and making ice cream or jam.
*Peaches can be held at room temperature until soft enough to eat, and then refrigerated for up to two weeks.
*Three to four medium sized peaches equal a pound.
*One bushel of fresh peaches equals 48 pounds and will yield 18-24 quarts if you are canning or freezing.
*Growers today most frequently sell their peaches in 1/2 bushel or smaller containers.
*Nectarines are not a cross between a peach and a plum. They are simply a variety of peach without fuzz.
*There are two basic types of peaches—freestone and clingstone. The flesh is much easier to remove from a freestone peach, so they are the ones most often grown for fresh or eating raw.
