The easiest, yummiest red lentil recipe👇🏾

Red lentils have easily become a staple part of my diet. They’re super quick and simple to prepare. Food is fuel and lentils are like premium grade, full of protein, fiber, and other micro nutrients. Here’s how I like to make them:

Ingredients:
2 cups red lentils - washed and drained
1 can crushed tomatoes
1 can unsweetened coconut cream
1 onion - diced
1 bell pepper - diced
4 cups of vegetable broth or water
2 tbsp high heat oil
1 tbsp ginger
1 tbsp garlic
1 tbsp spicy curry powder
1 tsp black pepper
1 tsp cumin
1 tsp coriander
2-3 tbsp brown sugar (to taste)
Salt to taste

~add diced onions, ginger and garlic to heated pot with oil. Sauté for 1 min
~add the remaining spices and sauté for another 3min, stirring frequently to prevent burning
~stir in the broth (or water), crushed tomatoes, and red lentils. Simmer for about 15 minutes
~add coconut cream and diced bell peppers. Simmer for another 5-10 minutes - until lentils are soft
~add brown sugar and salt to taste

I had red lentils with vegan whole wheat naan bread here and it was sooo good. It goes well with rice, quinoa, potatoes, veggies, avo toast - basically everything! Save this and try it out yourself (:

Life is so fluid. Being overly attached to things in a changeable environment naturally leads to resistance and struggle. But flowing along with life creates ease. Using non attachment, we can develop a mind that allows experiences to come and go without holding so tightly to them.

I find it helpful to note that indifference and non-attachment aren’t the same things. Indifference shows up as insensitivity, carelessness and a lack of passion. You can still be caring, passionate and fully engaged in each moment while learning to let go when it’s time.

Practicing non-attachment means releasing what no longer serves you on your path and creating space for what’s to come. 🦋

Ingredients for dish pictured:
-couscous
-veggie broth
-roasted zucchini
-roasted grape tomatoes
-roasted chickpeas
-green onions
-thyme
-lemon
-salt & pepper

I love building muscle, and here are 3 reasons why I think you should too:

🌻 Gaining muscle boosts our metabolism, which means we burn more fat - even at rest. This also means we can and should comfortably eat more nutrient dense calories to fuel muscle growth

🌻 Muscle building is a healthy and natural way to shape the body. Instead of obsessing over things we can’t change, we should love ourselves wholly and focus on improvement in the areas that we can

🌻 Building muscle makes us strong; it increases the strength of both our muscles and bones, while supporting mental strength. And everyone knows that strong is sexy

When in doubt, make Buddha bowls.

For real though, they’re the perfect “idk what to eat” meal. That exact thought is what led me to make this simple and yummy Buddha bowl. I used:

🥬 Three vegetables - spinach spring mix, avocado topped with h**p seeds, and roasted sweet potatoes (I def left the potatoes in a lil bit too long, but trusttt me they still hit)

🌾 Two grains - jasmine rice and quinoa boiled together

🧆 One plant protein - spiced and roasted chickpeas

Whenever you feel like you have no food (which really means nothing readily eatable right😅), look through your kitchen to see if you can manage to find at least one vegetable, one grain, one plant protein, and maybe some kinda sauce/dressing. And just like that, you have the makings of a Buddha bowl!

Lots of people seem to know fundamentally what they should to do to bring more health into their lives, they just don’t really do it. There’s often some kind of mental resistance here.

A negative self image can make us believe that all attempts to improve are futile.

A highly stressed mind could be too focused on keeping everything together to implement healthy lifestyle change.

A depressive mindset could lack the vigor & energy needed to initiate an action towards growth.

That sweet spot of wellness is perpetually out of reach for so many not because of a lack of knowledge or direction, but because of an unhealthy state of mind.

The good news? We can train our minds and change our mindsets anytime we want ✨

Prioritizing our mental helps us notice when there’s imbalance. Take a moment to reflect and address it directly (currently resurfacing from a moment, hey friends🤗). Then reconnect with your intentions, and focus on bringing wellness to all aspects of your life in ways that resonate with you.

Smoothies are a super important part of my diet, helping me get lots of nutrients in to fuel my body daily. Making them into bowls is a fun way to switch it up and add a greater variety of ingredients

Here’s what in this smoothie bowl:

Base:
-Coconut milk
-Frozen blueberries
-Coconut oil
-Dates
-Plant-based protein powder
-Almond butter
- Green Superfood blend

Toppings:
-H**p seeds
-Banana
-Dark chocolate chips

Oregano is a pretty common herb, but a lot of people have no idea how many benefits it has other than flavoring Italian food.

Here are just 5 of the amazing health benefits of oregano (origanum vulgare):

- Fights cancer: Oregano is rich in strong antioxidants. It supports our body’s natural resistance to free radical damage and cancer
- Antimicrobial: Oregano has potent antibacterial, anti fungal AND antiviral properties
- Insect repellant: Studies have shown that oregano can be more effective than commercial products at repelling insects - without the gross chemicals
- Boosts gut health: Oregano aids the flow of bile into digestive organs and supports a healthy intestinal microbiome
- Anti-inflammatory: Compounds in oregano activate our body’s anti-inflammatory system. This makes it useful for pain relief - with some studies showing it to be as effective as morphine

A concentrated form of this herb, like oregano oil, may be needed for topical use and for stronger medicinal benefits. You can also use it in fresh, dried, diffused or encapsulated forms.

Wanna know what one of the most powerful happiness hacks is?

🤍 G R A T I T U D E 🤍

Practicing gratitude amplifies positive emotions, rescues us from negative ones, and connects us with others. People who are grateful tend to enjoy life experiences and feel satisfaction more deeply.

Here are 3 of my favorite ways to cultivate a stronger expression of gratitude:

- Train your brain to see and focus on the good in your life experiences
- Keep a gratitude journal and write down ANYTHING that sparked a feeling of thankfulness in you daily
- Focus on your own strengths instead of comparing yourself to others

I know it can be challenging to celebrate blessings when things feel like the worst, but it’s always worth it. Let’s use gratitude as a tool to make the most of our lives - the ultimate gift. 🤍

I think I could actually eat avocado toast everyday for the rest of my life. It’s so easy to make and so yummy.

Plus avocados are a great source of healthy fats and nutrients, like oleic acid and folate, that make for a better brain and body. So I really just might.. 🤔

This super fresh version of avocado toast is one of my go to ways to prep it - inspired by those times when I couldn’t decide between eating a salad or avocado toast lol. Swipe for a quick recipe and try it out yourself!
