Microgreens are a super easy-to-grow superfood. Packed with nutrition, tasty and beautiful, use them in salads, tacos, with side dishes and to top off soups, as well as a boost to smoothies.

To grow your own, poke holes in the bottom of a shallow disposable aluminum pan and fill with clean potting soil, then pack it down. Sprinkle seeds over soil and keep moist. Once they begin to sprout keep them in a sunny window or under a plant light. It helps to sit the pan in a tray and water from the bottom after the seeds sprout and until harvested. Do not allow to dry out. When greens are 2 to 3 inches, use a sharp knife and “mow” a handful at a time to harvest. You can have a constant supply by starting the next batch halfway through the current batch.

Some of the most common seeds used for sprouting are:
Kale
Broccoli
Lettuce
Beet
Mustard
Basil
Pea
Chard
Parsley
Cilantro
Radish

There are many others you can try. Grab a pack of seeds and give it a go!

Want a different way to fix Brussels sprouts? Slice sprouts on a mandolin (use the guard!) and sautee in olive oil and a pat of butter with paprika, poppy seeds, sesame seeds, garlic, bacon pieces and black pepper until tender. Cooking them this way brings out the best flavor!

Brussels sprouts are low on calories but high on the nutritive scale. A 1 cup serving will have 4g of fiber, 3g protein, 13% the daily value of vitamin A, 124% for vitamin C, 6% for iron, 10% for vitamin B-6, 5% for magnesium and 3% for calcium.

Shaved Brussels sprouts with toasted almonds and dried cranberries. Toast the almond slices in a hot pan and set aside. Then using a mandolin, slice the Brussels sprouts a little thicker than a quarter inch. Heat butter or gee in saute pan and cook the sprouts until almost tender. Add a bit of water and let steam until they reach the desired firmness. Mix in the almonds and dried cranberries.

There's a lot of talk these days about bone broth. What is it? Well, just like it sounds, it's a broth generally made from beef bones; fish bones, chicken bones or other animal bones. We all know that homemade chicken soup is very healing. What makes it such a great thing is the collagen derived from those bones once they have been boiled.

Collagen, or gelatin, is made up of amino acids (collagen peptides) called Glycine, Proline and Glutamine. These are proteins. Glycine is made by the liver in our bodies but in very small amounts. The liver uses it for detoxification. These amino acids are found primarily in cartilage, tendons, bone and skin.

The benefits of bone broth are many:
*supports thyroid function
*gives youthful radiant skin
*promotes healthy hair and nails
*increases absorption of calcium
*protects the body from sudden trauma due to bacteria sepsis and hemorrhage
*improves blood flow
*enhances the body's ability to burn fat
*regulates human growth hormone (HGH)
*calms the nervous system and promotes sleep
*prevents oxidative stress
*is an antiinflammatory
*protects and heals the lining of the stomach and aids in digestion
*helps joint function
*rich in calcium, magnesium, potassium, and phosphorus

Consider incorporating more bone broth into your diet by adding it to a meal while cooking, making it the base of a soup, or simply sipping on it after a workout instead of processed protein shake powder. My favorite post-workout meal is bone broth with pieces of lean beef, kale and rice or noodles, then topped with cilantro, basil, chives and lime. The possibilities are endless, and your body will thank you for it.

Here's a nutritious breakfast for you. Egg and spinach scramble with sweet potato latkes. To make the latkes you only need well strained (all moisture squeezed out in cheese cloth or paper towels) grated sweet potatos and one egg per potato. Add grated onion, salt and pepper. Mix all well and separate into 2 oz portions. Plop onto olive oil greased pan on medium low heat. Press into patties and cook first side until egg sets and latkes stay together. Then turn over and finish cooking the other side. If you wish mix yogurt with Apple sauce to top the latkes. Today I'm eating them plain, and I think they are fine on their own, as well. They also pair very well with sauteed spinach and grilled chicken for dinner.
