Here are 3 things I wish I had known before my daughter left home:

1. Two conflicting emotions can exist together.
You can feel proud of them and heartbroken at the same time.

2. The quiet can feel louder than the chaos ever did.
After years of being needed, the silence can feel surprisingly emotional.

3. Preparing yourself matters too.
So many of us focus on launching our children well while neglecting our own health, friendships, purpose, and identity.

I often wish there were some sort of instruction manual for the empty nest, because parts of it can feel far harder and more emotional than anyone really prepares us for… but perhaps that’s because it’s not just our children finding their way, it’s us too. 🤍

My version of the Taco Power Bowl (page 196). Ground beef, sautéed peppers and onions, shredded lettuce, greens, guacamole, smoky chipotle aioli… honestly, this was packed with flavour and surprisingly simple to throw together.

I swapped the rice for quinoa and topped it with broccoli sprouts for a little extra crunch and goodness.

As we move through midlife, simple meals with plenty of protein, fibre, and nourishment can make such a difference to energy, blood sugar, and feeling satisfied.

A good reminder that healthy meals don’t have to be complicated to feel satisfying. Simple meals like this can be both nourishing and delicious… and won’t leave you washing up for the rest of the evening. 😊

One thing I’m learning more and more in midlife is that consistency often matters far more than complexity.

I think we sometimes feel we need to constantly “fix” ourselves, but often our bodies thrive on the simple things done consistently.

Good habits really do stack up over time. Good sleep. Daily movement. Morning light. Real food. Connection. Rinse and repeat.

I recently read Bryan Johnson’s list of 41 things he’s learned while “spending millions” on longevity, and it sparked some interesting conversations around how many of the most powerful health habits still come back to the basics.

Scrambled eggs & oats.

I know… a slightly odd combination, but a surprisingly good one.

Here’s how I make it:

• 1/2 cup oats (I use gluten-free)
• 1 banana, mashed (not too ripe)
• 1 1/2 tbsp milled flaxseed
• 1 egg
• pinch of sea salt
• dash of cinnamon (I like adding this as it may help soften the blood sugar spike a little)

Mix together, then fry until golden and slightly crunchy around the edges.

Top with:
• full-fat Greek yoghurt
• warmed frozen berries
• your favourite protein powder

Optional extras:
• drizzle of honey
• almond butter

If you’re grain-free, you can swap the oats for tigernut flakes, unsweetened coconut flakes, or chia. You can also swap the flaxseed for chia or h**p seeds.

And ladies, as we head through midlife, protein and fibre really do matter. This packs in around:
✔ 35g protein
✔ 23g fibre

I promise it tastes far better than you would think… and it keeps you full for hours.

As we move through midlife, getting enough protein becomes so important for muscle, metabolism, and overall energy.

Quick Protein Egg Muffins

Eggs, cottage cheese, parmesan, peppers, onions, spring onions, herbs, salt & pepper.
Whisk, pour into a muffin tray, and bake until set (about 20–25 minutes).

Simple, satisfying… no fuss, no overthinking.

Because a healthy, delicious meal doesn’t have to be complicated or take hours in the kitchen.

Around 15g of protein for 2 muffins.

I’m planning to batch cook these and freeze them for the week… makes life that little bit easier.
