Haven’t posted my food in a while, but here’s a lovely breakfast especially for my vegetarians! This is my take on a north African dish called Shashuka. Traditionally Shizuka is eggs poached in a tomato sauce served with yogurt, but here’s my version. Here we have three poached eggs with yogurt, a spicy tomato sauce, arugula, and avocado. This dish has a whopping 36g of protein and is super filling and delicious!

This vegan (but still protein packed) Greek bowl is the perfect spring meal for dinner! I discovered something that changed the game, folks. Here’s the secret: take the leftover brine from your Kalamata olives and soak chunks of firm tofu in it and you get VEGAN FETA CHEESE! I swear it tastes like the real thing and it’s just as protein packed! Mix that in with some roasted garlic chickpeas, tomatoes, olives, arugula, cucumber and green onion and enjoy!
