Unlike boiling, which can cause water-soluble vitamins (like Vitamin C and B vitamins) to leach out into the water, roasting keeps those nutrients locked inside the florets. Plus, the light charring adds a savory "umami" depth without the need for heavy sauces.

Pro Tip: Keep the stems! Peel the woody outer layer and slice the insides into rounds to roast along with the florets; they contain just as much fiber and a lovely sweetness.
