Last night was all about quick, simple and fresh. I had to drive to Orlando and back and tome was short so I came up with this prosciutto barrata salad. Spring mix with fresh basil, heirloom tomatoes, prosciutto and barrata cheese with a balsamic glaze finish. It was absolutely amazing and so quick and easy to make!

I’m so sorry for my lack of posting. I started back at work and my brain is just exhausted. I’ve still been cooking, and even photographing, but I keep forgetting to post 🤦🏽‍♀️!

Yesterday would have been my dad’s 79th birthday, so we celebrated with some of his favorite foods. Smoked pork steaks and brussel sprouts with air fried sweet potatoes with a honey lime sauce. This was a first time for us smoking brussel sprouts and let me tell you, they were delicious! Th pork steaks pairs beautifully with the Pinot Noir. We all shared our favorite papa stories with my hubby who never got the opportunity to meet him. It was as a very special night.

I love to cook, but as a busy working mom, sometimes I just don’t have the time. That is when I am so lucky to have Immaculate Consumption! Not only can you pop in and pick up premade healthy meals, but she does preordered delivery’s! I highly recommend her delicious meals. Her salad made my hubby do a happy dance 🤣

Years ago I worked at an organic food store where I had to have a daily soup, so I decided to pull out one of my old recipes. This is roasted cauliflower and white bean soup served with garlic bread. This was so rich and creamy and warmed our belly’s and hearts. I forgot just how good it was and I am so glad I remembered this old recipe.

Over the weekend we went out for the hubby’s birthday and there was something on the menus that had my taste buds salivating, but it wasn’t gluten free, so…I decided to put my own spin on it. I give to you seared ahi on a bed of quinoa drizzled with caper hollandaise and roasted lemon parm broccoli. It was amazing! Not sure how it compared to what I couldn’t have, but both the hubby and I enjoyed it.

I know it’s August and HOT in FL, but preseason football is here, so last nights brain meal was turkey pumpkin chili! Dark meat turkey, pumpkin and beans are all brain foods, and it was topped with a dollop of Greek yogurt (also a brain foods), so it was a big bowl of brain fuel (plus is was delicious)! I add a generous amount of cheese, because as I’ve mentioned before , there’s no such thing as too much cheese. This meal pleased the whole family and was a perfect meal in between games.

Gluten free Tuscan salmon cavatappi with asparagus and cremini mushrooms was last nights brain meal and it certainly did not disappoint! The salmon was flash fried and offered a nice crispy texture to the creamy pasta sauce. Even the kids enjoyed this one (which always makes mom happy).

Last night I ventured out and made something I’ve never made before and I’m so glad I did! Gluten free duck ramen with shiitake mushrooms anda a spft boiled egg!Duck, eggs and mushrooms are brain foods, so this was an added bonus. I used some home made chicken bone broth and seasoned it with mirin, rice wine vinegar, gluten free soy sauce and brown sugar and it was delicious! The yolk of the egg made the broth so rich and silky…I definitely see this being a repeat dinner.

Last nights Asian tuna lettuce cups were oh my yum! With ginger, garlic, sesame oil, gluten free soy sauce, shredded carrots, green onions and toasted sesame seeds it had my doing a happy jig! Next time, I plan to double it since the hubby wolfed his down, then watched me hoping I would t be able to finish mine 🤣. It was the perfect dinner with this crazy FL heat.

Turkey teriyaki meatball stir fry was for dinner last night. I’ve found with kids, if you make it a meatball, they will eat it! This made not just the kids, but the adults happy last night!

This poke bowl last night was insanely delicious! I marinated the ahi in gluten free soy sauce, sesame oil, garlic, ginger, saricha and green onions, then did a quick sear on it. I places it over brown rice with avocado, mango, edamame, green onions and drizzled with spicy mayo. My hubby finished his first and just watched me hoping I wouldn’t finish mine 🤣! It paired beautifully with the gewurztraminer I found. This is a German grape that is similar to a dry Riesling and pairs great with spicy asain food.

The seafood stock in this shrimp and corn chowder took it to another level! I cooked it slow and low with bay leaves and saffron to bring out more flavor. The chowder then had shrimp, corn, garlic, onions, peppers and potatoes and topped with fresh chives. It was delicious and paired perfectly with the rose on a hot day.
