Fresh, light, and full of spring vibes 🌱✨
This Spring Quinoa Salad with Lemon Vinaigrette is the perfect way to welcome the season—crisp veggies, fluffy quinoa, and a zesty kick of lemon 🍋🌸

Ingredients:
- 1c quinoa, rinsed
- 2c water or vegetable broth
- 1c fresh spinach, chopped
- 1/2c asparagus
- 1/2c radishes, thinly sliced
- 1/4c red onion, diced
- 1/4c fresh parsley, chopped
- 1/4c feta cheese (optional)
- 2tbsp sunflower seeds

Instructions:
(1) In a medium pot, bring water or broth to a boil. Add quinoa, reduce heat to low, cover and simmer for 15 minutes. Fluff with a fork & let it cool.
(2) While the quinoa is cooling, prepare the vegetables, chop the spinach, asparagus, radishes, red onion, and parsley.
(3) In a large bowl, combine the cooled quinoa, spinach, asparagus, radishes, onion, parsley, and feta. Toss gently to combine.
(4) In a small bowl, whisk together all the ingredients for the dressing.
(5) Pour the dressing over the quinoa salad and toss until well coated.
(6) Sprinkle with seeds for an extra crunch and serve immediately.
