{Mix together cooked spaghetti squash, cooked turkey mince, enchilada sauce, black beans, sweet corn, onion, bell peppers, diced tomatoes, chili powder, cumin and Mexican cheese and put in casserole dish. Balsamic Fig Chicken 🐓
{roasted diced sweet potatoes and cubes zucchini at 425 for 20 mins - season with pepper and garlic. Cook chicken breasts in pan with canola oil 5-7 mins per side, until fully cooked and transfer to chopping board. Add diced shallot and chopped rosemary to the pan the used pan and sautés with canola oil. Add 5 TSP of balsamic vinegar and 2T fig jam and stir until becomes like syrup. Add splash of chicken stock and 1/4C water and stir. Slice chicken breasts and put together with roasted veggies then drizzle everything with balsamic fig sauce!}

Apple Pork Chops with Roasted Veg 🍎🐽
{Preheat oven to 450 degrees, spray baking sheet with canola oil, chop baby potatoes into quarters and toss with thyme, sage, onion powder and garlic powder. Slice carrots into slivers and season with pepper, roast for 25 mins. While the veg cook, spray a pan with canola oil and cook pork chops until brown, remove from pan onto plate. In same pan cook chopped yellow onion until soft, add chopped apple, cinnamon, a splash of chicken stock and 1/3 C water - simmer until it gets thick and apple is soft. Top pork chops with apple/onion mixture, sprinkle everything with chopped parsley and enjoy!}

Eating clean doesn’t mean you have to lose out on eating foods you love - portion control and healthier substitutes are key! I grew up with pasta as a staple dinner ingredient and it’s such a comfort food for me - here’s our healthy spin on it from earlier this week!

Shrimp zoodle stir fry 🍤
{Thaw frozen shrimp and remove shell and tail, sauté yellow onion, garlic and shrimp in large pan or wok. Add bag of frozen stir fry veggie blend and extra frozen broccoli florets. Toss in coco aminos and turmeric and add green zucchini squash (already zoodled). Stir and simmer and serve! Can be topped with unsalted peanuts for healthy fats/texture crunch!}
