I recently relocated to the Philippines. I am here as a part of a ministry started by my wife and late husband, Future and Hope for the Philippines, Inc. My wife and I are ministering to 20 churches and planting more. As a committed carnivore living in the Philippines has been a challenge. Filippino food is delicious but often drenches their meat in sauces.
I crossed a bridge a couple of days ago. In my effort to maintain my all meat lifestyle I purchased 4 kg of beef in an open market that would scare ALL of my western friends. The market was overrun by flies especially in the meat and fish section. There was also the requisite rat. Except this rat was likely a pet and eating food placed by the shop owner. Still ugly however. The assistant sliced the beef according to my instructions. It wasn’t as thick as I wanted but perhaps that is better. It will cook quicker. All the meat was washed/rinsed when we got back to the apartment. I cooked all of it in a flat bottom wok with coconut oil and stored the left overs in the fridge in the common kitchen. The taste was not particularly familiar but the meat was not off/spoiled! The texture was reassuring and I enjoyed having the satisfaction of being a master over my western mindset and eating local.

Today was learning day. It was payday and restock day. I went to the business Costco near me. There were two cuts at $3.79 a pound. I picked beef round, eye of round, a full case, 12 individually wrapped pieces of meat. I brought them home and refrigerated 11 I cut the one into round steaks. I selected the ends and one steak and prepared them as usual in my HexClad fry pan. I know how to trim the fat and how to trim the silver skin, but I opted not to for now. Upon digging into my freshly cooked meat, I understood immediately the term “ground round” taking a tough piece of meat and making it into hamburger. I’m not new to cheaper cuts of meat. I will no doubt have stronger jaws by the end of the month. Unless I give up and grind the rest into hamburger. Fortunately actually do like meat that takes a little effort. I’m smarter than I was this morning live and learn.
