šŸ²šŸ As the seasons change, there’s nothing quite as comforting as a warm bowl of soup! Here’s a simple, nourishing recipe that’s gentle on the stomach and perfect for seniors to enjoy:

Hearty Vegetable & Chicken Soup
Ingredients:
• 1 tbsp olive oil
• 1 small onion, diced
• 2 carrots, sliced
• 2 celery stalks, sliced
• 1 cup diced potatoes
• 1 cup cooked chicken (shredded)
• 4 cups low-sodium chicken broth
• 1 tsp dried thyme
• Salt & pepper to taste

Instructions:
1. Heat olive oil in a pot. SautƩ onion, carrots, and celery until soft.
2. Add potatoes, chicken, broth, and thyme. Bring to a boil.
3. Lower heat and simmer 20 minutes until veggies are tender.
4. Season with salt & pepper and enjoy!
