Banana Split Fruit Pizza - bright, sweet, and perfect for summertime fun!
Ingredients:
For the crust:
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1 large egg
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
For the base layer:
1/2 cup strawberry or raspberry jam
For the topping:
1 cup whipped cream or whipped topping
1 banana, sliced
1/2 cup fresh strawberries, sliced
1/2 cup pineapple chunks, drained
1/4 cup maraschino cherries, halved
1/4 cup melted semi-sweet chocolate for drizzle
Instructions:
Preheat your oven to 350°F (175°C). Line a baking sheet or pizza pan with parchment paper.
In a bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla until smooth.
In a separate bowl, whisk the flour, baking powder, and salt. Gradually mix the dry ingredients into the wet ingredients until a soft dough forms.
Press the dough into a circle on your prepared pan, about 1/4 inch thick. Shape the edges slightly for a clean pizza crust appearance.
Bake for 12–15 minutes, or until the edges are lightly golden. Cool completely before adding toppings.
Spread the jam evenly over the cooled crust.
Top with dollops or swirls of whipped cream, then gently spread it over the jam layer.
Arrange the banana slices, strawberries, pineapple chunks, and halved cherries over the whipped layer.
Drizzle the melted chocolate over the top using a spoon or piping bag.
Chill the fruit pizza for at least 30 minutes before slicing and serving.
Decoration Tips:
Use fresh, ripe fruit for the best color and flavor slice the bananas last and brush lightly with lemon juice to prevent browning.
Create a pattern with the fruits: arrange in radiating circles or colorful clusters to make each slice look balanced and vibrant.
For an extra touch, add rainbow sprinkles or chopped nuts just before serving.
Use a small zip-top bag with the corner snipped off to get clean, controlled chocolate drizzle lines.
Serve each slice with a dollop of extra whipped cream or a single cherry on top for a fun, banana-split style presentation.
Store leftovers in the refrigerator and enjoy within 1–2 days for best texture and freshness.
