Happy St. Patrick’s day Peeps!!

Thought I would make today pancake day in my household 🥞. I added some extra things to our batter to make it a little more nutrient dense, like collagen, maca, ASHWAGANDHA, cinnamon and seed flour. I’ll write down the recipe so you can try it out and see if you like it.

Also, how delicious is this matcha drizzle 🤤, don’t let the green full you cause it’s quite delicious. It’s a matcha tahini drizzle and here’s how you can make it.

2 TBSP of tahini
1 TBSP of matcha or keto matcha
2 tbsp of water.
1/2 lemon, squeezed.
1 tsp of maple syrup.
Whisk all the ingredients together and drizzle over your paleo pancakes.

Here’s the recipe for some delicious paleo pancakes.

1 1/2 cups of paleo mix.
1 1/3 cup of UNSWEETENED almond milk. We make our own with the
1 tsp of cinnamon.
1/4 tsp of ASHWAGANDHA
1/2 tsp of gelatinized maca.
2 TBSP of seed flour.
2 TBSP of vanilla collagen

Whisk all dry ingredients together making sure everything is well combined. Add the milk and whisk well. In a hot griddle add the pancake mix until browned.
Top with a grain free granola, blueberries and some of that tahini matcha drizzle.

Hope you all are doing well, it’s insane what is happening in this world right now but we have to keep in mind we could be in worse things or situations. The uncertainty can drive someone mad that’s for sure but my advice is go outside, sit and be still. Stay grounded and take deep breaths. Go on a nature hike if there is one near you or even do some meditation 🧘🏻‍♀️ outdoors.
This event or season shall pass and we would look back and realize how strong we were together.

H E L L O world!!
We were on spring break all last week in Oklahoma and came home yesterday afternoon to an insane reality.
We have tried to get all the stuff we need to keep ourselves nourished and keep this virus at bay that’s going around the world.
It may seem like a crazy time to be alive but this is a wonderful opportunity to reach out and talk to your neighbors about what the may need. Specially the elderly and those single parents who are out of work.
Thankful for friends who were willing to shop for us while we were on vacation to make sure we had what we needed Incase we were going to come home to a complete lockdown.
Life right night may seem a little challenging but with great opportunities to make a big difference around your neighborhood and community.
Please wash hands and keep safe!

If you’ve been tagging along with me through out the 5 years on Instagram you by now know how much I love leftovers. You can remake the same thing you are the night before or revamp it to something else. Either way you still save money by eating that meal twice in one week. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

This was our dinner last night, roasted PALEO chicken meatballs with herb cauliflower rice, sauerkraut for the fur and roughly chopped parsley. I even have some greens underneath cause GREENS ARE LIFE. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

I buy the paleo meatballs already premade and all I have to do is grab a sauce pan and 2 tbsp of EVOO and let these meatballs sizzle and brown to my liking. It doesn’t get any easier than that. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
The cauliflower rice is made with a tbsp of coconut oil, 1lb of frozen cauliflower rice. 1/2 tsp of Himalayan pink salt, pepper, sun dried Italian flat leaf parsley and 1 tbsp organic seasoning salute from Costco cause now I have to buy in bulk cause I cook ALL THE TIME. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Being a mom of boys is a joy but boy can these little bears eat. If you don’t know I have two boys in elementary school (kindergarten + 3rd grade) which eat like they are growing through a growth spurts daily. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

It doesn’t get any easier. You can even make vegan meatballs ahead of time by adding cooked quinoa, flaxseed, h**p seeds and cooked cannellini beans with some smoked paprika, EVOO, salt and pepper and fresh herbs. Add all the ingredients to the food processor and scoop each one out and bake or fry in a small sauce pot to your liking. What ever way you choose to eat ether paleo or vegan make sure you save some for an easy lunch the next day. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

My friend Andrea is coming over for some girl time and thought I would make her this little number. An avocado toast with arugula, bone broth infused peas, pears 🍐 and smoked sockeye salmon. All these ingredients you can find . Love that place and happy they have them all over the U.S so, no matter where I am I can whip this up. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

WHEN YOU TRAVEL DO YOU BUY GROCERIES TO HAVE IN YOUR HOTEL? ⠀⠀⠀⠀⠀⠀⠀⠀⠀

I know it’s not preferable for people but for us it always makes sense to get a hotel room with a fridge, it makes my life easier I can go to Trader Joe’s and get the things I need cheaper than anywhere else ⠀⠀⠀⠀⠀⠀⠀⠀⠀
I can make myself a nutrient dense meal that I know what’s in it and it won’t bother my stomach. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Specially with kiddos and the amount of snacks they eat. I swear I feel like my boys eat every 15 min during a growth spur. Anyone with boys feel the same way? I can’t even imagine how it will be when they are teenagers 😱. They will probably eat everything in the fridge. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Seriously, leftovers are the best specially when all you have to do is heat them up. In this case we had leftover spinach tomato chicken from the other night and lentil noodles from another and all I had to do was bring them together and add some chopped parsley and some good EVOO drizzle. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

We never in a million years would of thought we would have a little one with epilepsy, but God did and we are here trusting, loving on Josh and praying through this season in our lives. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Happy Weekend, Peeps!!
Feeling extra grateful this morning cause we were part of the
event benefiting children’s health.
This sweet bear loves there acai bowls and avocado toast but they also have wraps and nourishing food bowls. We are so happy they are in our neighborhood now and we can run to it, have it delivered or even be able to take to school for a special treat.
They are located here in Allen, TX and are so close to the interstate so there are no excuses to have some nutrient dense food while on the road. They are open all day so come for breakfast 🍳 lunch, dinner or just a little pick me up and get fueled with .

For thought I would share us celebrating 🥳 josh’s birthday last year (12/16).
I still can’t believe he is 6, where does the time go?
Never in a million years would I have thought I would have had 2 boys .
Josh is super special (a little 🌟) and even though he has childhood absences seizures, he still gets to do all the fun boy stuff.
He was excited to go camping with dad this winter and get to ride a horse (totally supervised and with a helmet) and he was able to go for a hike with a guide. Last night he was talking to me about how he wished he wasn’t sick and that his brain wouldn’t take time outs and to say that crushed my mama heart is an understatement but I’m thankful for the medical care we have and the fact that we live in a place we have health insurance cause many countries do not.

In this Friday, I want you to be grateful for the healthy or otherwise kiddo in your lives, the ones that some days challenge you as a parent or make you question your parenting skills.
As parents we are so blessed to get one life to love, encourage, lift up and teach our kiddos to be the best versions of themselves, lets be grateful we get that chance cause many do not.
again my sweet boy. May the Lord continue to give you courage to live out your purpose in this one life.

🎉Pancake 🥞 toasting to FRIDAY!

I mean, what do you do when you have left over pancakes and you are craving something more, you top with your favorite coconut yogurt and add some blood oranges and fresh dill. A good ole helping of honey drizzled on top and maybe some honey picked jalapeños and you’re all set.

I can’t even explain it, it’s so good. These paleo mix make it easy for us to have pancakes on the weekdays a breeze. Just add water or your favorite milk of choice and stir and that’s it. I usually add collagen, cinnamon, 2 tablespoons of flour (adds other nutrient to the pancakes) and reishi mushroom. Elevating the pancake mix to the next level y’all.

You can top it with just about anything your heart’s desire. I went super simple today since our buddy Glenn gifted us some of his first batch of honey 🍯 and whoah!, it’s so good and I wish I can share this breakfast with everyone on here.
He also made those pickled jalapeños that are insane good. I am latina so I love me some spicy foods and jalapeños are my favorite just ask the hubs.

On another note, josh’s school play was awesome and he did so good. He had 5 absences seizures during the whole performance but thankfully he didn’t have any during the time he had to say his lines. So super proud of him, I’m sure he was super nervous but he still did awesome. Will have that video to share for y’all to see up on my stories.
