Hot Honey Protein Bowl
Ingredients (per bowl):
½ avocado, sliced
½ cup roasted sweet potatoes (cubed)
½ cup cooked ground meat (beef, turkey, or chicken)
¼–½ cup cottage cheese
Drizzle of hot honey
Salt & pepper to taste
Instructions:
Roast Sweet Potatoes: Toss cubes with olive oil, salt, and pepper. Roast at 400°F (200°C) for 20–25 minutes until tender.
Cook Ground Meat: Season with your favorite spices and cook until browned.
Assemble: In a bowl, layer sweet potatoes, ground meat, avocado slices, and cottage cheese.
Finish: Drizzle with hot honey and sprinkle with a pinch of salt and pepper.

Ingredients:

For the Marinade:

- 1 ½ lbs flank or skirt steak, thinly sliced

- 3 tablespoons olive oil

- Juice of 2 limes

- 2 tablespoons soy sauce

- 1 tablespoon Worcestershire sauce

- 2 cloves garlic, minced

- 1 teaspoon ground cumin

- 1 teaspoon chili powder

- ½ teaspoon smoked paprika

- Salt and pepper to taste

Grilled Asparagus and Mozzarella Salad

Ingredients:
4 oz Cheese, mozzarella, reduced fat (1 lean)
3/4 cup (3.95 oz) Raw Tomatoes, Grape (1.5 green)
3/4 cup (3.54 oz) Cooked Asparagus, frozen (1.5 green)
4 tbsp Basil (1/4 condiment)
1/4 tsp Garlic Powder (1/2 condiment)
1/4 tsp Pepper (1/2 condiment)
1 tsp Vinegar, balsamic (1 condiment)
5 sprays Non-stick Cooking Spray (1/2 condiment)

Preparation:
1. Cut asparagus spears into thirds. Place asparagus pieces in a lightly greased grill pan and cook until tender. Remove and set aside.
2. Cut 4 oz of part-skim mozzarella cheese into cubes and place in a medium bowl.
3. Chop or slice the basil leaves. Add the basil along with the grape tomatoes and cooled asparagus pieces to the mozzarella.
4. Combine the pepper and garlic powder with the mozzarella mixture and drizzle with balsamic vinegar.

1 Serving:
3 greens, 1 lean, 2 3/4 condiment

Grilled Chicken & Broccoli Bowls with Creamy Garlic Sauce

**Ingredients:

- 2 boneless, skinless chicken breasts

- 2 cups (200g) broccoli florets

- 2 tbsp olive oil

- Salt & black pepper

- 1/2 cup (120ml) Greek yogurt

- 2 garlic cloves, minced

- 1 tbsp lemon juice

- 1 tbsp chopped fresh parsley

- 1/4 tsp paprika

- Cooked rice or quinoa (for serving)

**Directions:

1. Marinate & Grill Chicken: Season chicken with salt, pepper, and 1 tbsp olive oil. Grill until fully cooked, then slice.

2. Roast Broccoli: Toss broccoli with remaining olive oil, salt, and pepper. Roast or grill until tender.

3. Make Sauce: Mix Greek yogurt, garlic, lemon juice, parsley, and paprika in a bowl.

4. Assemble Bowls: Serve sliced chicken and broccoli over rice or quinoa, drizzling with the creamy garlic sauce. Enjoy!

One of my favorite summer salads, and it is SO EASY to make. Just a few simple ingredients...

1. Baby Spinach
2. Mandarin oranges ( I peel my own, to stay away from added sugars, but you can used canned)
3. Fresh shredded parmesean cheese or Asiago if you prefer.
4. Blueberries
5. Dried cranberries

Top with sweet Vidallia dressing and enjoy!! For those who love a lot of flavor you can add lemon pepper seasoning and it really offsets the flavor.
You can substitute other fruit, sometimes I add pineapple and sliced almonds, depending on your preference.

Simple Watermelon Cucumber Feta Salad

**6 Ingredients:
• 1 English cucumber
• 1 Lime, fresh zest and juice
• 1 handful Mint, fresh leaves
• 6 cups Watermelon
• 1 Sea salt flakes and fresh ground black pepper
• 6 oz Feta cheese

**Instruction:
1. Prepare Ingredients:
- Cut watermelon into bite-sized cubes.
- Slice cucumber into thin rounds or half-moons.
- Chop mint leaves.

2. Assemble Salad:
- In a large bowl, combine watermelon, cucumber, and mint.
- Crumble feta cheese over the top.

3. Dress & Season:
- Drizzle with fresh lime juice and zest.
- Sprinkle with sea salt flakes and black pepper to taste.

4. Serve: - Toss gently and serve immediately for a refreshing summer salad.

1 grilled chicken breast, sliced
2 cups romaine or mixed greens
½ avocado, diced
½ cup cherry tomatoes, chopped
½ cup cucumber, sliced
½ cup grilled corn
1 tbsp olive oil
½ tsp black pepper
½ tsp garlic powder
½ tsp sea salt
½ tsp chili flakes (optional)
For the Avocado Dressing:
½ avocado
¼ cup Greek yogurt
1 tbsp lemon juice
1 garlic clove, minced
2 tbsp olive oil
